All the flavor/sweetness of mincemeat, but less intense with fresh apples,

I must try your fresh apple mincemeat, Rod. I love mincemeat. (The vegetarian kind) Years ago I used to make delicious pear mincemeat. I bought fresh pears when they were in season from our local orchard and then canned them for the Christmas season.

Farmhouse Porridge
Hearty corn/oat bran combo,
good for any meal.
Ingredients:
2 cups water
2/3 cup light oat bran
1 med. sweet onion, diced
15oz can non-GMO corn, drained
1/2 tsp garlic granules
1 tbsp dried parsley
1/2 tsp salt
1 tbsp virgin olive oil
Directions:
In a medium sauce pan, heat water until simmering,
stir in oat bran, then remaining ingredients as listed.
Allow to simmer 5 min., stirring occasionally.
For less onion crunch, briefly sauté first
or microwave to al dente.

Ingredients:
1 1/2 cups probiotic, low-fat cottage cheese
1/2 cup dried, finely shredded coconut
1/2 cup shelled hemp seed
1/2 cup water or milk
2 tbsp dried parsley
Directions:
Mix well, keep refrigerated,
serve with fresh fruit, cooked veggies,
or whatever supports your WOW.

After the first test, I still believe the ingredients are healthy and diabetes friendly,
but the combo was discarded. I like the dried shredded coconut on fresh fruit,
probiotic cottage cheese with dried parsley, and hemp seeds with oat bran:
Stir 2/3 cup light oat bran into 1 3/4 cups simmering water,
then 1/2 cup hemp seeds and 1/4 tsp salt. Cover pan,
remove from heat and let rest 15 min.
Then combine these into one meal if you dare.
