Mixed Veggie Fritata (serves four)
Simple veggie pancake.
Tasty served with mild salsa.

Ingredients:
1/2 cup light oat bran
1 tbsp dried parsley
1/4 tsp baking powder
1/4 tsp garlic powder
1/4 tsp salt
2/3 cup hot water
1/3 cup egg whites
2 tbsp virgin olive oil
12oz pkg frozen mixed veggies,
rinsed then microwaved to al dente.

Directions:
Heat large non-stick frying pan to medium.
Combine dry ingredients in mixing bowl,
stir in hot water, egg whites, olive oil;
fold in cooked veggies without juice.
Spoon evenly into frying pan, cover pan,
reduce heat to low, and cook 15-20 min.

For easy
Veranda Veggies,
thaw frozen veggies in hot water,
spoon over mini bites of firm tofu,
microwave, drizzle with olive oil,
sprinkle with S & P, then serve
on the veranda.

However
Mama's Edamame
is more popular at the B&B down the street:
Simmer angel hair edamame pasta to al dente,
top with the thawed veggies and microwave,
then drizzle/sprinkle as desired; even serve
on the veranda if you got one.
