Comfort Casserole
Comfort Casserole
A breakfast/brunch type egg dish
of comfort food with easy preparation.
If desired, top with shredded cheese.
Ingredients:
1/3 cup light oat bran
1/3 cup water
1/3 cup egg whites
2 xlg eggs, whipped
1/2 tsp garlic granules
1/2 tsp sea salt
1 1/2 tbsp dried parsley
15oz can non-GMO corn, drained
1 med. sweet onion, diced
2 tbsp virgin olive oil
Directions:
Lightly oil a 2 quart baking dish.
Assemble ingredients as listed in a mixing bowl,
then spoon into baking dish. Place uncovered dish
on rack in large pot with 1" simmering water.
Cover pot and steam mixture 25 min.

To upscale, serve with raw walnuts and applesauce;

Chocolate Coconut Yogurt
Stir 1/3 cup unsweetened shredded coconut
into 1/2 cup cold half & half, then stir in
1/4 cup 100% cacao powder, then stir in
1 cup nonfat plain Greek yogurt.
Refrigerate overnight.
Add yogurt after coconut and cacao
are well mixed. For sweet yogurt,
try the next restaurant.

5oz container plain Greek yogurt
1/4 cup cold water
1/4 cup yellow mustard
1 tsp ground fennel seeds
2 tsp turmeric powder
2 tbsp dried parsley
3 tbsp dried chives
1 tsp garlic granules
3/4 tsp sugar
1 tbsp virgin olive oil
Directions:

then stir in remaining ingredients as listed,
olive oil last. Refrigerate overnight,

Sardine Burgers
Sardine Burgers (not grilled)
Sardine mixture is frozen until used,
then heated before spooning onto buns
for mild fish-flavored "burgers".
Ingredients:
two 4oz cans skinless/boneless sardines, drained & mashed
15oz can red kidney beans, drained & mashed
2 tbsp lemon-flavored fish oil
1/4 cup cold water
2 tbsp dried parsley
1/2 tsp garlic granules
small red onion, diced
Directions:
Lightly oil 8" x 8" baking dish
(for easier portions when served).
Stir ingredients as listed,
then press flat into baking dish,
cover with plastic wrap and freeze.
To serve, grill (or toast) hamburger buns
and separately heat sardine mixture.
Spoon mixture onto buns, add whatever
and serve like burgers.
Tips: Chill sardines and beans
before opening containers. This mixture
is cooked food and may be consumed cold,
even with salads and on crisps. Score portions
before mixture is completely frozen.

Chunky, crunchy, and munchy. Serve with
currants (raisins) or chopped prunes.

3/4 cup raw sunflower seeds
1 cup white sesame seeds
1/4 tsp salt (optional)
Optional: Pour off any peanut oil and replace
with extra virgin olive oil (or just add EVOO).
Serving size: Big nibble with small spoon

Chocolate Granny Granola
No-bake & super chewy with survival appeal
For cacaophony interlude, serve with square of 100% cacao chocolate, like:

Combine 10oz jar RX Nut Butter*
1 1/3 cups quick-cooking rolled oats
1/2 cup currants (small raisins)
1/4 cup 100% cacao powder

or substitute 1 1/4 cup almond butter
Use large wooden spoon and deep mixing bowl.
Mix well until granola-like clusters form.
Refrigerate but freezing is best.

Apparently, some inflammation is a good thing, but disease and some vaccines
can cause overwhelming inflammation. Include lotsa polyphenol foods in daily diet
to maintain good immune system balance during stresses of disease and vaccines!

Tuna Bean Dip
Tuna Bean Dip (simpfied version of Tune a Bean Dip)
Great with stalks of leafy celery and slices of red bell pepper.
When served add Rice Wine Vinegar to thin (optional).
Instead of removing outer fiber, permit paleo guests
to bite top of celery stalk and pull down with their teeth.
(stalk is fresher when consumed).
Trim top (slightly) and bottom of celery bunch,
then cut bunch in half and rinse stalks well.
Lower half stalks have the tough fiber!
Ingredients:
5oz can albacore tuna in water, drained & crumbled
15oz can cannellini beans, drained & mashed
1 1/2 tbsp dried parsley
1/4 tsp garlic granules
1 tbsp fish oil
S&P as desired
Directions:
Mix well and refrigerate.
