Ranch-style Banana Bread

Ranch-style Banana Bread

City folk may prefer added sweetener
(1/3 cup brown sugar is popular ...
or drizzled later with maple syrup).
Serve with raw walnut pieces.

:scratch: "What about them egg yolks?"
Save 'em for Ranch-style Eggnog
(yolks, cream, rum, etc.). :roll:

:roll Ingredients:

2 1/3 cups rolled oats (not thick)
3/4 cup half & half, briefly warmed
1/2 cup egg whites, briefly whipped
3 tbsp virgin olive oil (or melted butter)

1 1/3 cups mashed banana
1 1/2 tsp cinnamon
3/4 tsp salt
1 1/2 tsp baking powder

:arrow: Directions:

Pre-heat oven to 350F degrees;
lightly oil 8"x 10" baking dish.

In a large bowl, stir oats with half & half,
then stir in egg whites, then olive oil.

In a medium bowl, combine banana
with spices, then baking powder.

Vigorously stir mashed banana into oats,
then pour evenly into baking dish;
bake 50 min.

Hi Rod,

Your Ranch-style banana bread recipe may be what I am looking for when my parents come home for an overnight this week end. I was looking for something of that nature that is healthy. I was wondering how you think it would taste with the human motor oil drizzled over it?

Sandy, Motor Oil is not so complementary to the Banana Bread
(I munched on MO after a heated slice of BB last night). :lol:
However, coffee then made the MO "dessert" tolerable.

BTW1: BB reheated after refrigeration,
seemed better "bread" than when just baked.
This hints that BB as a small loaf could work,
if baked at 325F for an hour or so. :finger:

BTW2: MO with walnuts refrigerated is a Yum :!:
For marketing: "Serve now MO Bettah Cacao"

Hi Rod,
I will avoid pouring MO over the ranch banana bread. ;) :) Thank you for taste testing the combination. I was thinking I will use what you suggested for the recipe (the 8" by 10" casserole pan) this week end when my parents are here.

My sister is struggling with low carb flours and getting the textures right for baking. Did you like Lupin flour in your test baking? I mentioned it to her and she had never heard of it.

Thank you too for the "10 Meat Alternative..." article. I found that very helpful. :thumright: I am now wishing I had picked up and eggplant at the grocery store on Sunday.

Sandy, I still haven't bonded with lupin flour. The info shouts "good nutrition",
but I've found that most "flour" makes blood sugar control more difficult!
I even discarded a bag of lupin flour, then purchased another later. :oops:
Go figure! :roll: ... I'm still drifting away from processed foods.
Go figure! :roll: ... Even 100% cacao powder is "processed". :o

:idea: As for the ranch banana bread ...
Today's breakfast was a refrigerated slice reheated, with walnuts. :roll
A hearty Banana Bread Pancake comes to mind. :lol:

:idea: Speaking of Heads of State ...
(and with a new king's coronation soon),
this recipe reminds of a Ranch-style Quiche. :D

:roll Ingredients:

9oz pkg raw broccoli slaw
1 med. sweet onion, sliced thin
6oz pkg Texas Style Cornbread Mix
2 xlg eggs + 1/3 cup egg whites
2/3 cup half & half
2 tbsp virgin olive oil

:arrow: Directions:

Lightly oil 8" x 8" baking dish;
pre-heat oven to 350F degrees.

Rinse broccoli slaw in salted water, drain well,
mix with sliced onion, then spread in baking dish.

Whisk cornbread mix with remaining ingredients,
olive oil last, then pour evenly over broccoli slaw.

Bake covered with foil 50 min., remove foil,
and continue baking 20 min. If desired,
immediately top with shredded cheddar.

Raw Almond Putting

Hydrated almonds as pudding-like treat.
(sliced almonds are best for dentures) ;)

:roll Ingredients:

2 cups natural applesauce
3 tbsp light oat bran
3/4 cup raw almonds with skin
1 1/2 tsp cinnamon
1/4 cup water

:arrow: Directions:

Mix, then refrigerate overnight; 8)
stir before first serve.

:idea: Shredded coconut complements these flavors
(increase applesauce and/or water if necessary).

Appley Sauce

A nutritious & delicious spooner.

:arrow: Combine 46oz container unsweetened natural applesauce
with 3 packets True Lemon powder; set aside 1 cup*
Use remaining portion for Appley Sauce:

Combine 3 cups applesauce, 1 cup raw almonds,
and 2 med. tart red apples (washed 'n chopped).
Refrigerate overnite and between servings. 8)

* Use this portion of Appley Sauce to preserve
mashed avocado: Refrigerate avocado in glass bowl,
topped with 1/4" Appley Sauce after servings.
Sauce has complementary flavor but can be
discarded (or consumed separately)
between servings of the avocado.

(sauce is already cooked, but simmer if desired)

:idea: Include 1 1/2 cups diced zucchini (not peeled, inner core optional)
for a cold pasta sauce salad. Serve with cheese and bread sticks. :roll

:roll Ingredients:

24oz jar Marinara Sauce
6oz can tomato paste
1 1/2 cans cold water
1 tbsp Italian Seasoning
2 tbsp dried parsley
1 tsp garlic granules
1 1/2 tbsp virgin olive oil
1 1/2 cups finely shredded carrots

Mix well, olive oil last,
then refrigerate overnight.

Pumpkin flatbread, baked like cake; like spoon bread - eat like pancake.
Upscale with maple syrup drizzle - tasty, served with raw walnuts!

:idea: Also like oatmeal bread (serve in bowl with half & half).

15oz can pumpkin puree
1/4 cup brown sugar
1/4 tsp salt
3/4 tsp baking powder
3/4 cup light oat bran
1/3 cup half & half
1/3 cup egg whites
2 tbsp virgin olive oil

:arrow: Directions:

Lightly oil 8" x 8" baking dish;
pre-heat oven to 375F degrees.

Combine ingredients as listed,
spread evenly in baking dish,
reduce oven to 350F degrees,
then bake 55 min.

1/2 cup shredded coconut*
1 tsp pumpkin pie spice
3 tbsp brown sugar
1/8 tsp salt

* unsweetened, dehydrated

add pumpkin puree last.
Keep refrigerated. 8)

Versatile cheesy dip with slight sweetness.
Garnish with preferred fresh herb.
Try a scoop on a waffle! :o

:roll Ingredients:

15oz container Part-Skim Ricotta Cheese
1/3 cup Coarse Ground Dijon Mustard
1/3 cup dried red bell pepper flakes
1/2 tsp turmeric extract powder
1/2 tsp garlic granules

Briefly soak pepper flakes in very hot water,
then drain well; stir into remaining ingredients.
Keep refrigerated. 8)

Edamame comes to mind as complementary protein,

:idea: Actually, a simple breakfast can be sufficient nourishment to start the day,
especially when a later snack can supplement that new day nourishment.

16oz pkg fresh broccoli slaw, rinsed
1 1/2 tbsp dried parsley
1 1/2 tbsp dried chives
1/2 tsp garlic granules
3/4 tsp salt
2 xlg eggs + 1/2 cup egg whites, whipped

:arrow: Directions:

Toss broccoli slaw with spices,
then steam in 2-qt bowl 30 min.;
pour on whipped eggs, steam 15 min.
(use double boiler to steam)

:idea: Tip: Choose broccoli slaw pkg
with good balance of veggies. ;)

Applesauce Flatcake

Camp-style baked oats 'n stuff*.
Consume like pancakes 'n waffles.
Upscale servings with walnuts.

* or bake like muffin tops
on non-stick baking sheet,
then call them "flatcakes". :D

:roll Ingredients:

2 cups rolled oats
1 cup unsweetened applesauce
1/4 cup brown sugar
1/2 cup half & half
1/2 cup water
1 tsp cinnamon
1/2 tsp salt
1 tsp baking powder
1/3 cup egg whites
2 tbsp virgin olive oil

:arrow: Directions:

Lightly oil 8" x 10" baking dish;
pre-heat oven to 375F degrees.

Mix ingredients in the order listed,
stirring well each time. Let rest 5 min.,
stir, then pour evenly into baking dish.

Bake 45 min.
