Pumpkin Bred
Not a sweet bread, more noticeable by what's missing from traditional pumpkin bread.
An oat bran flatbread meant to accompany spreads, soups, or whatever. Or spoon
applesauce on it, sprinkle on cinnamon, and call it a flatbred pancake.
(include brown sugar and spices if necessary)
Most pumpkin bread recipes (with much white flour, oil, and sugar)
are not "health food", unless for "mental" health or when you're starving.
To upscale this impossibly basic Pumpkin Bred, try with A/P Sauce:
1 cup applesauce, 1/3 cup canned pumpkin, 1/2 tsp cinnamon.
Also try 1/3 cup orange juice concentrate
plus 1/2 cup water instead of 2/3 cup water.
Ingredients:
2 1/3 cups light oat bran
1 tsp baking powder
1/2 tsp salt
2/3 cup water
1/3 cup half & half
1 xlg egg
1/3 cup egg whites
1/2 15oz can pumpkin
2 tbsp virgin olive oil
Directions:
Lightly oil a non-stick baking sheet;
pre-heat oven to 400F degrees.
In a large bowl, combine dry ingredients,
then stir in water and half & half
(helps moisturize oat bran).
In a medium bowl, whisk egg and egg whites,
Stir pumpkin into oat bran, then eggs,
then vigorously stir in olive oil.
Spoon batter onto baking sheet,
reduce oven to 375F and bake 45 min.
