Spicy Brown Uptown

Spreadable Spicy Brown Mustard with je ne sais quoi. :roll:

:roll Ingredients:

2/3 cup Spicy Brown Mustard
1 tbsp fine oat bran (sifted from oat bran)
1/4 tsp garlic powder (optional)
1/4 tsp turmeric extract powder
1 tbsp dried parsley
1 tbsp water

:arrow: Directions:

Mix well and refrigerate overnight, 8)
then stir before first serve.

Garden Patties Royale
(makes 6 patties or 9 sliders) :lol:

When "veggie burger" is so "last century"! :roll:

:roll Ingredients:

1 1/2 cups simmering water
2/3 cup tri-color quinoa, rinsed
1/4 rounded cup golden flax meal
1/3 cup light oat bran
- 1 1/2 tbsp dried parsley
- 1 1/2 tbsp dried chives
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
1 1/2 tbsp virgin olive oil
1 cup finely shredded carrots
1 1/2 cups diced sweet onions

:arrow: Directions:

Simmer quinoa until most water absorbed,
vigorously stir in flax meal then oat bran,
then stir in remaining ingredients;
fold in carrots and onions last.

Press mixture into lightly oiled
9" x 9" baking dish, cover with
plastic wrap and refrigerate 8)
overnight to blend flavors.

Serve as cold patties or
briefly fry in olive oil.

Chocolate Chia Mudd (4-5 servings)

No-cook pudding with mild sweetness.
Upscale with raw walnuts, pumpkin seeds,
sunflower seeds or sliced almonds.

:roll Ingredients:

2 1/3 cups cold milk
7 tbsp dark chia seeds
3 tbsp desiccated coconut
3-4 tbsp 100% cacao powder

:arrow: Directions:

Combine chia seeds and milk, let rest 15 min.,
stirring several times, then stir in coconut
and cacao powder; refrigerate overnight, 8)
then stir briefly before serving.

Tina's Tofu Tuna

A Tofu Helper or Tuna Helper!

:roll Ingredients:

16oz container firm tofu, rinsed
5oz can chunk light tuna, drained
1 1/2 tbsp fresh lemon juice
1 1/2 tbsp dried dill weed
1/2 tsp garlic powder
1/2 tsp sea salt
2 tbsp virgin olive oil

:arrow: Directions:

In large bowl, mash tofu with pastry cutter,
then stir in remaining ingredients as listed.

Press into glass bowl, attach lid
and refrigerate until used. 8)

You helped me to understand better than ever before what is going on with prediabetes and even diabetes
and the role the liver plays. My son was just diagnosed with diabetes. :cry: I may pass on this post to him.

:bana: Sudden testing at 80 when "things don't change easily", but dawn phenomenon episodes (126 mg/dL) inspired another round
of research with many finger pricks. With very controlled testing (almost Keto-level daily carbs), I observed an after dinner 158
reduce to 109 by 5:00am, then rise to 126 at 8:30am (good evidence of this phenomenon).

Another controlled day followed with 112 before dinner, 112 five hours after dinner, 84 at 8:00am, 87 at 9:30am, then breakfast
followed by 133 at noon. Mysterious trend, suggesting my body had been depleted of its stored glucose (glycogen) and was now
(before breakfast) slowly creating glucose instead of releasing it from storage.

All this sans medication for a decade, with better weight and lifestyle! Google Gemini summarized how/why of these readings.

:bana: Yesterday's 2/3 cup of ice cream (24 carbs) at 7:00pm added 60 points to a higher blood sugar (but all this dropped
to 99 this morning by 6:00am). This hints that dawn phenomenon is not significant yet, perhaps because of so few carbs

With so few carbs yesterday, I snacked on 3 celery sticks and a mozzarella cheese stick at bedtime ...

(process known as gluconeogenesis)." Non-diabetics have automatic increase of insulin to compensate for this.

Cottage cheese is a diabetes-friendly source of protein and the sodium can be reduced by rinsing it
(or purchase lower sodium brands).

Good for any time of day!

:roll Ingredients:

12oz pkg frozen edamame
1 cup shredded carrots (lightly packed)
1 large sweet onion (diced)

Serve 1 cup with 1 tsp olive oil,
1/4 cup cottage cheese (rinsed)
and/or 1 mozzarella cheese stick,
then S&P as desired.

:arrow: Directions:

In large sauce pan, simmer rinsed
frozen edamame in 1 cup water 10 min.,
then spread on carrots then onions.

Cover pan and simmer until veggies
are al denté, then stir briefly.

:idea: Cottage cheese is rinsed
to reduce sodium (optional).

Three Months Diet

in order to achieve a good HbA1c average).

With frequent blood sugar testing, new dietary habit
can be learned where food choices become intuitive. :roll

I never knew this...which may explain some of the readings we were getting for George and trying to do keto.

I wish I had know this and other things you mention. It certainly was'nt as simple as I assumed it would be.
