Oatmeal Corncakes
Oatmeal Corncakes (makes four 5" pancakes)
Ingredients:
1 cup very hot water
2/3 cup quick-cook oatmeal
2 tbsp oatmeal
1/2 tsp salt
1 tsp sugar
2 lg eggs, whipped
2 tbsp virgin olive oil
1 cup canned corn, drained
Directions:
Stir 2/3 cup oatmeal into hot water,
cover bowl and let rest 3 min.
Stir in 2 tbsp oatmeal to increase fiber,
then remaining ingredients as listed.
Fry like pancakes on hot griddle.
Serve sweet, savory, or "Who can tell?"
(syrup, sour cream, cheese, whatever)

Morning Cacaophony
Combine 3 cups light oat bran,
2/3 cup 100% cacao powder,
2 tbsp psyllium husk,
and 1/4 tsp salt.
To serve, heat 2/3 cup water to simmer,
stir in 3 tbsp MC mixture, 2 tbsp sunflower seeds,
1 tsp coconut oil, and 1 tsp sugar (or sweetener).
Try with dried fruit like raisins or cranberries.
Let mixture rest 5 min., stirring a few times.
Serve milk or whatever on the side.
Try 1/3 cup unsweetened dried coconut
instead of psyllium husk powder.
Also try with Chocolate Applesauce

No-bake, brownie-like flippin' whatever.
"What The Flip is this?!" Dunno
Try serving chilled crumbles with applesauce
and sprinkle of cinnamon (or whatever ...
even dried cranberries!)
Ingredients:
1 cup Seedy PB*
2 cups canned garbanzo beans, drained
1/2 cup monkfruit sweetener
3/4 cup unsweetened shredded coconut
* Seedy PB
Combine 16oz jar peanuts-only butter
with 1 1/4 cups white sesame seeds.
Directions: (need plastic wrap,
two 9" x 12" trays & small cutting board)
In a large bowl, use pastry cutter to grind
garbanzo beans into coarse texture, then
stir in sweetener and Seedy PB.
Cover a small tray with plastic wrap,
evenly spread Flippin' mixture on tray,
cover with plastic wrap, press down with
slightly smaller cutting board.
Remove top plastic wrap, then sprinkle on
half of shredded coconut. Cover with wrap,
press down with cutting board, place other tray
upside down on top and flip 'em over.
Remove top tray and plastic wrap, sprinkle on
remaining shredded coconut. Cover with wrap,
press down with cutting board, refrigerate.

Sunny Blue Crunch
While trying to find my leftover Succomame for this morning's brunch
I found leftover thawed frozen blueberries & applesauce. More dessert
than breakfast food, I upscaled it with other leftover stuff.
Thaw 16oz pkg frozen blueberries with 2 cups natural applesauce,
then stir and keep refrigerated.
For a serving of Brunch Crunch, stir in dried shredded coconut,
then top with Greek yogurt, then raw sunflower seeds.
MunchabunchaCrunch (they say) to start the day.

natural applesauce and/or crushed pineapple,
then spread on chopped raw walnuts.
Tips: Melted coconut oil and cream
should be just thin enough to pour
(not too warm). Slice Cake thin.
Add sweetener if desired.

To cook ...
Heat 3/4" water in saucepan to a simmer.
Lightly oil inside of dishes with virgin olive oil.
Carefully break an egg into each dish,
then gently set into simmering water.
Cover pan and steam about 10 min.
Carefully remove dishes from pan, cool 5 min.,
then gently spoon around egg to release
(or just serve in dish).

Whipped Cacao
Whipped Cacao (unsweetened dip)
Pour 16oz container whipping cream Into a bowl
and slowly whisk in fermented cacao powder
until thick (but not too thick). Refrigerate.
Add sweetener or whatever to serve as a dip
and/or spoon into hot milk or coffee.
Whipping cream without additives is best.
Why fermented cacao? That's what I had

Maybe better than a lottery (a few people win at the expense of many "investors"). On the other hand,
many diets include so much processed food, that some supplements (like vitamins) may be important.

1 tsp chili powder
1 tbsp virgin olive oil
2 tbsp tahini
Directions:
Add to food processor in order listed,
then process about 3-5 min.
Karrotamus (adapted from Southwestern Chip Dip ;- )
Ingredients:

Combine well and refrigerate.
Try red chard and sweet onions sautéed in olive oil,
then stir in canned beans and Saucyness for a quick soup.
Add water or preferred broth, mushrooms to upscale;
include juice of canned beans.
