Pumpkin Bred
Pumpkin Bred
Not a sweet bread, more noticeable by what's missing from traditional pumpkin bread.
An oat bran flatbread meant to accompany spreads, soups, or whatever. Or spoon
applesauce on it, sprinkle on cinnamon, and call it a flatbred pancake.
(include brown sugar and spices if necessary)
Most pumpkin bread recipes (with much white flour, oil, and sugar)
are not "health food", unless for "mental" health or when you're starving.
To upscale this impossibly basic Pumpkin Bred, try with A/P Sauce:
1 cup applesauce, 1/3 cup canned pumpkin, 1/2 tsp cinnamon.
Also try 1/3 cup orange juice concentrate
plus 1/2 cup water instead of 2/3 cup water.
Ingredients:
2 1/3 cups light oat bran
1 tsp baking powder
1/2 tsp salt
2/3 cup water
1/3 cup half & half
1 xlg egg
1/3 cup egg whites
1/2 15oz can pumpkin
2 tbsp virgin olive oil
Directions:
Lightly oil a non-stick baking sheet;
pre-heat oven to 400F degrees.
In a large bowl, combine dry ingredients,
then stir in water and half & half

In a medium bowl, whisk egg and egg whites,

then vigorously stir in olive oil.
Spoon batter onto baking sheet,

Quinoa-based grain burgers with an expensive name
created from two whimsical "sounds like" words.
Ingredients:
1 rounded cup multicolor quinoa
1 3/4 cups water
1/3 cup oat bran
1/4 cup egg whites
2 tbsp virgin olive oil
1/2 tsp garlic granules
2/3 cup diced sweet onions
3 tbsp dried chives
1/2 tsp salt
Directions:
Lightly oil an 8" x 10" baking dish.
In a medium sauce pan, simmer rinsed quinoa
until most of water is absorbed (about 20 min.).
Vigorously stir in oat bran, then egg whites,
then stir in remaining ingredients as listed.
Firmly press mixture into baking dish, then
cover with plastic wrap; refrigerate overnight.
To cook, lightly oil a non-stick frying pan,
place paté in pan, heat burner to medium,
then add pan and fry paté about 10 min.,
turning once; add extra oil if needed.
Tips: Combine a package of multicolor quinoa
with package of red quinoa for darker color.
Form mixture into serving sizes if desired.

Super EZ coconutty "ice milk".
Creamy without lotsa cream.
In a small jar, shake 1 cup half & half
with 1/2 tsp guar gum, then stir in
2 tsp sugar, 1/4 cup dried coconut.
Pour into a freezer container;
freeze, stirring occasionally.

Whoa! I watched the whole thing...I kept saying every so often, "Don't trip!!!" The finished Chocolate cake looked delicious and my mouth is watering just thinking about it. The video cleared up some of my questions too in "How'd they do that" when I see bought cakes in a cake shoppe. "

However, even the thick juice from canned white beans
would make a good base for maple syrup, apparently;

Serve with your heirloom demitasse spoons.
Ingredients:
1/2 cup 100% Cacao Powder
1 tbsp sugar
1/8 tsp salt
3/4 cup water
3/4 tsp vanilla
2/3 cup shredded coconut
(try unsweetened, reduced fat)
Directions:
Combine dry ingredients, stir in water, microwave 30-sec. intervals,
stirring each time (mixture foams if too hot). When mixture is heated,
whisk to complete, then stir in vanilla+coconut, cool and refrigerate.
Serve with raw walnuts (or raw almonds:
soak overnight in water, drain well, keep refrigerated)
For special occasions, stir in cream after refrigeration
(or low fat Greek yogurt).
Simple Chocolate Sauce

stir in 2/3 cup cacao powder, 1 tbsp sugar,
1/8 tsp salt, and 1/2 tsp vanilla.

OB Finesse
OB Finesse
OB pancakes that seem like rocket science
... until you finesse your griddle skills.
For OB Cacaos (pronounced "OB Cows"),
try with 2 tbsp 100% cacao powder + more water.
Ingredients:
1/2 cup water
1/3 cup half & half
1 1/3 cups light oat bran
1/4 cup egg whites
1/3 cup applesauce
2 1/2 tbsp brown sugar
3/4 tsp baking powder
3/4 tsp cinnamon
1/2 tsp salt
2 tbsp olive oil
Directions:
Lightly oil non-stick frying pan.
Heat water and half & half until very warm,
then stir in remaining ingredients as listed
(mix oat bran before other ingredients).
Heat frying pan to griddle temperature,
stir batter briefly, then fry 1/2 cup servings
(add extra water if batter gets too dry).
Refrigerate cooked extras.
A strange synergy of flavors and textures -
chilled OBs entice use as open-face sandwich or pita breads!
Like Victorian "crumpet" after crossing the pond?
Try warmed OB with bologna and horseradish mustard!
(just a guess - my impromptu test was sans bloney ...
but still better than the chocolate sauce!)

Daily Rounds (makes seven rounds,
adapted from OB Finesse recipe)
OB pancakes baked on parchment paper.
Add 3 tbsp dried herbs to see how easily
this recipe swings to "sandwich bread"!
Or try with 1/3 cup shredded coconut.
Ingredients:
1/2 cup water
1/3 cup half & half
1 1/3 cups light oat bran
2 1/2 tbsp brown sugar
1/4 cup egg whites
1/3 cup applesauce

3/4 tsp cinnamon
1/2 tsp salt
1 tbsp olive oil
1 tbsp oat bran

pre-heat oven to 400F degrees.

on baking sheet, evenly separated.

try combining 1/2 cup dried coconut*, 1/2 cup cool water,
1/2 cup natural applesauce, organic med. diced red apple.
Refrigerate until chilled, stir, sprinkle with cinnamon.
Makes 3-4 servings(?)
