Chocolate Breakfast Dish
(more nutritious CBD) :roll:

:idea: Combine 1 1/4 cups light oat bran,
1/4 cup 100% cacao powder,
1/4 tsp salt, 1 tsp cinnamon,
and 1 tbsp sugar.

:arrow: For one serving ...
microwave 1/2 cup water to simmer,
then stir in 3 tbsp oat bran mixture
and 2 tbsp raw sunflower seeds;
cover dish and let soak 5 min.

Stir again, then serve with milk,
half & half, a dollop or whatever. :roll


:idea: Another option ...

:arrow: Microwave 1/2 cup water to simmer,
then stir in 3 tbsp plain oat bran
and 2 tbsp raw sunflower seeds;
cover dish and let soak 5 min.

Stir in a sprinkle of cinnamon
and 1 rounded tsp coconut oil.

Cannellini Canoodle

Embrace this white bean dip frequently
to encourage consumption of raw veggies,
like red bell peppers, celery, zucchini. :roll

:arrow: Mash well and mix ...
2 15oz cans cannellini beans (no salt),
1/2 tsp salt, 1 tsp garlic granules,
2 tbsp dried parsley,
2 tbsp virgin olive oil.

:idea: Tips: Drain beans and use liquid
as desired to hydrate mixture.
Keep refrigerated; add fresh herbs
and/or minced veggies when serving.

:bana: Also try Cheesy Canoodle (add 1/4 cup nutritional yeast
plus more bean liquid if desired or sprinkle on dip when served). :roll

Salmon Peasy Casserole

Comfort food with easy assembly.

:roll Ingredients:

16oz pkg frozen petite green peas, thawed
15oz can salmon, skin & bones discarded
2 tsp dried dill weed
3/4 tsp garlic granules
3/4 tsp salt
1 1/4 cups whole milk
2/3 cup light oat bran
1/4 cup egg whites
10oz can Cream of Mushroom soup
1 tsp baking powder
1 tbsp virgin olive oil
1 xlg sweet onion, chopped
1 bunch green onions (tops, diced)

:arrow: Directions:

Thaw frozen peas in hot water, then drain.

Lightly oil 8" x 10" deep casserole dish;
pre-heat oven to 350F degrees.

In a medium bowl, mash drained salmon
and mix with dill, garlic granules, and salt.

In a large mixing bowl, stir oat bran into milk,
then stir in remaining ingredients as listed,
salmon next, then all veggies.

Spoon mixture into casserole dish,
cover and bake 1 hour, then
uncover and bake 20 min.

Red Grunchy Sauce
(previously "Grapey"; now "Grape+Crunchy") :roll:
When applesauce needs nutritional bite.

Bathe 2 lbs seedless red grapes in salty water,
drain well, rinse with fresh water, then
mash in food processor 20 sec.

Spoon into strainer to remove juice,
then mix with 1 cup chilled applesauce.

Refrigerate until served (try with raw walnuts
or even chopped almonds). :roll

:oops: I keep finding that fruit sugar is too much for a diabetic,
unless serving size is cut to a child's portion! And reminds
that some nutritionists caution "fruit is nature's candy". ;)

:idea: Tip: Dried fruit is worse since serving size usually
ignores that only the water has been removed.

:bana: After contemplating "sugar" and "don't eat too much"
I was reminded of a cartoon where the bad wolf is lectured
in the meadow by the good fairy :hithere to go straight ...
and wolf says "I'll go straight! to grandma's house!"

:arrow: So I melted a 3.17oz 92% cacao bar
then stirred in 2/3 cup diced walnuts*
and 1/2 cup currants, then spooned it
onto plastic wrap for refrigeration.
* or diced almonds for crunch ;)

Quintessential Loaf

Quinoa-based "meatloaf" with similar texture and flavor.

:roll Ingredients:

1 cup multicolor quinoa
1 2/3 cups water
15oz can red kidney beans
1/3 cup light oat bran
3/4 tsp salt
3/4 tsp garlic granules
3 tbsp dried parsley
1/3 cup egg whites
2 tbsp virgin olive oil
1 1/2 cups diced sweet onion
1 cup diced celery tops

:arrow: Directions:

Lightly oil 8" x 10" baking dish;
pre-heat oven to 350F degrees.

Simmer rinsed quinoa in water
until water absorbed (about 15 min.).

Drain beans, saving 1/3 cup juice.
Microwave juice until very warm,
then stir in 1/3 cup oat bran.

Mash beans well, then stir in oat bran,
spices, parsley, egg whites and olive oil.
Stir mixture into cooked quinoa,
then fold in diced veggies.

Firmly form loaf in baking dish, then
cover loosely with foil; bake 55 min.
Then remove foil and bake 10 min.
(if desired, top with cheese now).

:idea: Mix red quinoa with multicolor quinoa
for darker loaf (start with 1:2 cups ratio).

Lotsa saturated fat ...
but who eats butter with a spoon :?:

:arrow: Combine 14oz jar virgin coconut oil with
1/3 cup 100% cacao powder, 2 5oz cans coconut cream.

Coconut cream should be cool (use only the thick cream);
coconut oil should also be cool (soft but not pour).
Add more cacao powder if desired.
Store in a cool place.

OB '22 Cacao, a super quick 'n nutritious breakfast

Microwave 1/2 cup water just until simmering, stir in
2 rounded tbsp light oat bran, 2 tbsp raw sunflower seeds,
1 tsp 100% cacao powder, then cover and let soak.

:idea: If desired, then stir in 2 tsp virgin coconut oil,
a bit of sweetener (or dried fruit). Serve plain
(or with milk, half & half, or whatever -
even apple pie filling!) :roll

Oat Bran Biscuits

Oat Bran Biscuits (makes 6)

Serious oat bran - no flour!
Also try with raisins, nuts, seeds -
even herbs and spices :!:

:roll Ingredients:

1 cup very hot water
1/2 cup light oat bran
3/4 tsp salt
2 tsp sugar
3/4 tsp baking powder
1/3 cup egg whites, whipped
1/3 cup light oat bran
1 tbsp virgin olive oil

:arrow: Directions:

Preheat oven to 400F degrees;
place parchment paper on baking sheet.

Stir 1/2 cup oat bran into hot water,
then salt, sugar, and baking powder.

Whisk egg whites until foamy*,
stir into soaking oat bran, then
remaining oat bran, then olive oil.

* twirl handle between both hands
to simulate electric beater; works best
in a rounded bottom glass mug!

Let rest 5 min., then stir briefly.
Spoon batter onto parchment paper,
reduce oven to 375F, bake 40 min.

:idea: Tip: To increase height of biscuits,
top with another spoonful of batter, or
rest batter longer to absorb moisture.

Crunchy Corinthian Cacao :roll

:arrow: Spread plastic wrap on small tray.

Into melted 3.17oz 92% Cacao Bar,
stir 2/3 cup raw sunflower seeds,
and 1/2 cup Corinth raisins.

Spread thin on plastic wrap,
cover with more plastic wrap
and refrigerate overnight. 8)

Then break into pieces
and store in a cool place. :roll

:idea: Small sunflower seeds better complement these small raisins.
Substitute 1/2 cup dried Goji berries for the 1/2 cup currants
for Crunchy Chinense Cacao. 8)
Substitute 2/3 cup dried cranberries for the 1/2 cup currants
for Crunchy Vaccinium Cacao. ;)

Baked Eggplant Italiana (pre-test) :roll:

:roll Ingredients:

2 med. eggplants, sliced
2 lg sweet onions, chopped
2 15 oz cans non-GMO corn, drained
1 1/2 cups chopped Italian parsley
2 15oz cans diced tomatoes
1 tsp garlic granules
2 tbsp Italian Seasoning
1/4 cup virgin olive oil

:arrow: Directions:

Lightly oil 8" x 10" baking dish;
pre-heat oven to 350F degrees;

Wash eggplants, slice off ends, then slice
vertically into quarters, slice off centers,
then slice quarters into bite size cubes.

Place cubes skin-side down in baking dish,
then layer onion, corn, parsley, tomatoes.

Sprinkle on garlic granules, Italian Seasoning;
drizzle on olive oil. Cover loosely with foil,
and bake 1 hour.

:idea: Tips: To use seedy centers sliced off,
dice and spread on eggplant cubes.
Add salt if not in canned veggies.

OB Cacao Patty

"Flatbread" more than "brownie". :roll:
Spread batter about 1/2" to 3/4" thick;
after baking, cut into 2-bite pieces.

:roll Ingredients:

1 cup light oat bran
1/3 cup 100% cacao powder
1/2 tsp baking powder
1/2 tsp salt
1/2 cup applesauce
1/3 cup half & half
3 tbsp brown sugar
1/4 cup egg whites
1 tbsp virgin olive oil
2/3 cup raw sunflower seeds

:arrow: Directions:

Preheat oven to 400F degrees;
place parchment paper on baking sheet.

Combine ingredients in the order listed,
then stir in olive oil, then sunflower seeds.

Spoon batter onto baking sheet,
reduce oven to 375F, bake 35 min.

Not much recipe detail but clues that a crockpot
is ideal for getting collagen from meat bones,
suggesting: simmer the bones first, then add
precooked veggies and spices to the broth. :roll

- To hasten crockpot startup, rinse removable bowl in hot water, then add just boiled water, then bones.
Wipe any water off exterior of bowl before inserting into crockpot base.

Eggplant O'Bella

Steamed eggplant with baby bella mushrooms.

:roll Ingredients:

1 med. eggplant
3 cups baby bella pieces
virgin olive oil
garlic powder
S&P as desired

:arrow: Directions:

Wash eggplant, slice off ends, then slice
vertically into quarters, slice off centers,
then slice quarters into bite size pieces.

Place pieces skin-side down in microwavable dish,
add 1/4 cup water (or just rinse with water),
then cover and microwave 2-3 min.

Top with mushroom pieces, cover and microwave 1 min.
Pour off juice, drizzle with olive oil, sprinkle with S&P
and garlic powder.

:idea: Tips: One serving is about 1/4 of med. eggplant.
Complement with equal portion of mushrooms.
To upscale, steam with chopped green onions.

"Eggplant O'Bella" seems more concept than recipe,
with focus on the skin for its antioxidant nutrition
and to cook just enough for sufficient tenderness.

Recently, I cut off skin with 3/4" of the pithy interior,
cut skin into bite size pieces, rinse briefly, microwave
to al dente (about 1 1/2 min.), then add mushrooms,
diced green onion and finish cooking (about 2 min.).

Immediately drizzle with virgin olive oil, then sprinkle
with garlic powder and salt. A bit of shredded cheese,
briefly melted, will upscale this simplicity. :roll

:o Suddenly, topping with canned stewed tomatoes
(before cheese) seems further simplicity upscale ...
since the tomatoes are already cooked :!:

:arrow: Combine two 3.17oz bars 92% Cacao (melted),
9oz pkg Less Sugar Dried Cranberries, and
1 cup raw sunflower seeds (warmed);
spread on tray covered with plastic wrap.

Cover with more plastic wrap, press down to flatten,
then refrigerate overnight. Cut into bite-size pieces. :roll

:idea: Tip: Briefly soak cranberries in very hot water

Mackerel in Mustard Sauce

Creates layers like Sardines in Mustard Sauce.
Mackerel and mustard should be chilled.
Requires 2-cup glass bowl with lid.

:roll Ingredients for Mustard Sauce (prepare ahead):

12oz container Stoneground Horseradish Mustard
12oz of common yellow mustard
1 tsp garlic granules
2 tbsp dried parsley
1 tsp turmeric (optional)

:roll Ingredients for Mackerel:

15oz can mackerel, drained ;)

:arrow: Directions:

Remove skin and bones from mackerel,
then create small sardine-size pieces.

Layer sauce, then mackerel in bowl
and top with sauce. Refrigerate.
Serve like canned sardines. :roll:

:idea: Refrigerate excess mustard sauce
for other uses (it's versatile). 8)
Easier to hold mackerel in one hand
and scrape skin with a fork. ;)
