Pumpkin Bred

Not a sweet bread, more noticeable by what's missing from traditional pumpkin bread.
An oat bran flatbread meant to accompany spreads, soups, or whatever. Or spoon
applesauce on it, sprinkle on cinnamon, and call it a flatbred pancake. :D
(include brown sugar and spices if necessary) :lol:

:idea: Most pumpkin bread recipes (with much white flour, oil, and sugar)
are not "health food", unless for "mental" health or when you're starving.
To upscale this impossibly basic Pumpkin Bred, try with A/P Sauce:
1 cup applesauce, 1/3 cup canned pumpkin, 1/2 tsp cinnamon.

:idea: Also try 1/3 cup orange juice concentrate
plus 1/2 cup water instead of 2/3 cup water. 8)

:roll Ingredients:

2 1/3 cups light oat bran
1 tsp baking powder
1/2 tsp salt

2/3 cup water
1/3 cup half & half
1 xlg egg
1/3 cup egg whites
1/2 15oz can pumpkin
2 tbsp virgin olive oil

:arrow: Directions:

Lightly oil a non-stick baking sheet;
pre-heat oven to 400F degrees.

In a large bowl, combine dry ingredients,
then stir in water and half & half
(helps moisturize oat bran).

In a medium bowl, whisk egg and egg whites,

Stir pumpkin into oat bran, then eggs,
then vigorously stir in olive oil.

Spoon batter onto baking sheet,
reduce oven to 375F and bake 45 min.

Beefe Paté

Quinoa-based grain burgers with an expensive name
created from two whimsical "sounds like" words. :roll:

:roll Ingredients:

1 rounded cup multicolor quinoa
1 3/4 cups water
1/3 cup oat bran
1/4 cup egg whites
2 tbsp virgin olive oil
1/2 tsp garlic granules
2/3 cup diced sweet onions
3 tbsp dried chives
1/2 tsp salt

:arrow: Directions:

Lightly oil an 8" x 10" baking dish.

In a medium sauce pan, simmer rinsed quinoa
until most of water is absorbed (about 20 min.).

Vigorously stir in oat bran, then egg whites,
then stir in remaining ingredients as listed.

Firmly press mixture into baking dish, then
cover with plastic wrap; refrigerate overnight.

To cook, lightly oil a non-stick frying pan,
place paté in pan, heat burner to medium,
then add pan and fry paté about 10 min.,
turning once; add extra oil if needed.

Tips: Combine a package of multicolor quinoa
with package of red quinoa for darker color.
Form mixture into serving sizes if desired.

For Type 2 diabetics, instead of AYCE (All You Can Eat),
ALAYCE (As Little As You Can Eat) for meal/snack satisfaction
is better strategy to help minimize high blood sugars. ;)

:idea: Meal/snack goal is to complement carbs consumed
with available insulin during postprandial digestion
(about 4 hours after a meal).

Coconut Freeze

Coconut Freeze (proof of concept)

Super EZ coconutty "ice milk". 8)
Creamy without lotsa cream.

In a small jar, shake 1 cup half & half
with 1/2 tsp guar gum, then stir in
2 tsp sugar, 1/4 cup dried coconut.

Pour into a freezer container;
freeze, stirring occasionally.

A traditional recipe with good protein (if brown rice is used).
And these Goya Black Beans are perfect for a Paleo dish:

Morros à la Paleo

In a large bowl, combine 29oz can rinsed Black Beans
with 3/4 tsp garlic granules, 2 tbsp dried oregano,
1 cup diced sweet onion, 1 cup diced celery tops,
1 tbsp virgin olive oil, 2 tbsp apple cider vinegar.

:idea: Or upscale to Fiesta! (add 2/3 cup corn
and 1/2 cup of diced red bell peppers). :roll
Try fresh cilantro instead of oregano.

Unidentified Frying Objects

:scratch: Perhaps, pumpkin muffin pancakes
with anal-retentive focus on oat bran, :roll:
but surprisingly moist! :roll

For protein accompaniment, try with
"lowfat cottage cheese with active cultures"
mixed with crushed pineapple (drained). 8)

:roll Ingredients:

1/3 cup water
1/4 cup half & half
3/4 cup light oat bran
2 tbsp pumpkin puree
1 tsp pumpkin pie spice
1/2 tsp baking powder
1 1/2 tbsp brown sugar
2 tbsp egg whites
2 tsp olive oil
1/4 tsp salt

:arrow: Directions:

Stir ingredients together as listed,
allow batter to rest 5 min., then stir,
then fry as desired in non-stick pan
with a bit of olive oil.

:idea: Tips: Pan should be griddle hot;
turn when a UFO lifts easily.
(real ones have anti-gravity) ;)

Anything pumpkin sounds good to me now with winter about us down here.
I hope I still have some frozen cooked pumpkin in the freezer. Pumpkin soup would be a real winner today as well. :bana: :D

Whoa! I watched the whole thing...I kept saying every so often, "Don't trip!!!" :lol: The finished Chocolate cake looked delicious and my mouth is watering just thinking about it. The video cleared up some of my questions too in "How'd they do that" when I see bought cakes in a cake shoppe. "

(or cool, then dust with powder sugar)

:roll Ingredients:

1/2 cup water
1/3 cup half & half
1 1/3 cups light oat bran
3 tbsp egg whites
1/3 cup pumpkin puree
3 tbsp dark brown sugar
3/4 tsp baking powder
1 tsp pumpkin pie spice
1/2 tsp salt
2 tbsp olive oil

:arrow: Directions:

Lightly oil non-stick baking sheet;
pre-heat oven to 400F degrees.

Combine oat bran, water, half & half,
then stir in remaining ingredients;
spoon scoops onto baking sheet,
reduce oven to 375F, bake 40 min.

This is a good starting point since sweet potatoes are health food. 8)

:idea: However, even the thick juice from canned white beans
would make a good base for maple syrup, apparently;
maybe with a touch of butter and cinnamon
stirred in as the ingredients are heating. :roll

Choconutty Scoops
(adapted from https://bellyfull.net/homemade-chocolate-sauce-recipe
Serve with your heirloom demitasse spoons. ;)

:roll Ingredients:

1/2 cup 100% Cacao Powder
1 tbsp sugar
1/8 tsp salt
3/4 cup water
3/4 tsp vanilla
2/3 cup shredded coconut
(try unsweetened, reduced fat)

:arrow: Directions:

Combine dry ingredients, stir in water, microwave 30-sec. intervals,
stirring each time (mixture foams if too hot). When mixture is heated,
whisk to complete, then stir in vanilla+coconut, cool and refrigerate.

:idea: Serve with raw walnuts (or raw almonds:
soak overnight in water, drain well, keep refrigerated)
For special occasions, stir in cream after refrigeration
(or low fat Greek yogurt). 8)


Simple Chocolate Sauce

Microwave 1/2 cup half & half until warm,
stir in 2/3 cup cacao powder, 1 tbsp sugar,
1/8 tsp salt, and 1/2 tsp vanilla.

Microwave just until hot,
then whisk ingredients to complete.
Refrigerate to thicken.

Note: Further heating creates smoother texture
but continues to degrade cacao's antioxidants.

However, 85% cacao seems to be the dividing line between
candy and health food (or "medicine" like baking chocolate). :o

:idea: Speaking of dividing line ...

For antioxidant focus ("It's not candy!"),
try YMCA Spread (Your Mamma's CAcao):

Heat 2/3 cup half & half to very warm,
then stir in 2/3 cup 100% Cacao Powder,
1/2 tsp vanilla, 1 tsp sugar, 1/8 tsp salt.
Whisk to complete, then refrigerate. 8)

Spoonable (or spread on whatever).
Add 1 tbsp Hazelnut Syrup to upscale
... flavor and carbs. :roll:

Frozen Pumpkin Crisps

:scratch: "Say what?!" Just think "Pumpkin Paleo". :roll:

Lightly oil an 8" x 8" baking dish.

Combine 15oz can pumpkin puree, 1/2 tsp salt,
1/3 cup dark brown sugar, 2 tsp pumpkin pie spice,
1 cup reduced fat shredded coconut, 1 tsp vanilla,
and 2/3 cup raw sunflower seeds.

Flatten mixture into baking dish, cover with plastic wrap,
and refrigerate one hour. Score with turner into squares,
replace plastic wrap, and freeze completely. 8)

Serve frozen ... or crumble over vanilla ice cream
... or dollop a mini crock of crooked crumble. :lol:
Have a Paleo party and invite nuts if you dare!

OB Finesse

OB pancakes that seem like rocket science
... until you finesse your griddle skills. :roll:

For OB Cacaos (pronounced "OB Cows"),
try with 2 tbsp 100% cacao powder + more water.

:roll Ingredients:

1/2 cup water
1/3 cup half & half
1 1/3 cups light oat bran
1/4 cup egg whites
1/3 cup applesauce
2 1/2 tbsp brown sugar
3/4 tsp baking powder
3/4 tsp cinnamon
1/2 tsp salt
2 tbsp olive oil

:arrow: Directions:

Lightly oil non-stick frying pan.

Heat water and half & half until very warm,
then stir in remaining ingredients as listed
(mix oat bran before other ingredients).

Heat frying pan to griddle temperature,
stir batter briefly, then fry 1/2 cup servings
(add extra water if batter gets too dry).

Refrigerate cooked extras. :roll

:bana: A strange synergy of flavors and textures -
chilled OBs entice use as open-face sandwich or pita breads!
:scratch: Like Victorian "crumpet" after crossing the pond? :lol:

Try warmed OB with bologna and horseradish mustard!
(just a guess - my impromptu test was sans bloney ...
but still better than the chocolate sauce!) :roll:

Daily Rounds (makes seven rounds,
adapted from OB Finesse recipe)

OB pancakes baked on parchment paper.
Add 3 tbsp dried herbs to see how easily
this recipe swings to "sandwich bread"!
Or try with 1/3 cup shredded coconut. 8)

:roll Ingredients:

1/2 cup water
1/3 cup half & half
1 1/3 cups light oat bran
2 1/2 tbsp brown sugar
1/4 cup egg whites
1/3 cup applesauce
3/4 tsp baking powder
3/4 tsp cinnamon
1/2 tsp salt
1 tbsp olive oil
1 tbsp oat bran

:arrow: Directions:

Place parchment paper on baking sheet;
pre-heat oven to 400F degrees.

Heat water and half & half until very warm,
then stir in remaining ingredients as listed
(mix oat bran before other ingredients;
add final tablespoon of OB last).

Let mixed ingredients rest 5 min.,
stir again, then place 1/3 cup scoops
on baking sheet, evenly separated.

Reduce oven to 375F and bake 30 min.;
cool briefly, turn over and serve warm;
refrigerate baked extras.

:idea: For pre-biotic fiber (promotes beneficial bacteria in the gut),
try combining 1/2 cup dried coconut*, 1/2 cup cool water,
1/2 cup natural applesauce, organic med. diced red apple.
Refrigerate until chilled, stir, sprinkle with cinnamon. :roll
