:idea: An unhealthy microbiome may explain why serious disease occurs
since 70-80% of the immune system is in the gut. Easy rule of thumb:

don't overeat, and stay hydrated (especially with water). ;)

Crunchy Steel-Cut 'n Corn

Git Up 'n Go nourishment to plow your 40 acres
(or whatever) and to power your inner mule.
(cook a bit longer for less crunch 'n munch)

:roll Ingredients:

2/3 cup steel-cut oats
1 2/3 cups water
1/2 tsp salt
1/2 tsp garlic granules
1 tbsp dried parsley
1 med. sweet onion, diced
15oz can non-GMO corn, drained
1 tbsp virgin olive oil

:arrow: Directions:

Simmer steel-cut oats in water until al dente (15-20 min.).

Immediately sprinkle on herb/spices, then stir in onion.

When onion is al dente, stir in corn to heat,
then stir in olive oil. Remove from heat,
cover pan and let rest 5 min.

Tip: Serve with fresh orange slices. C :?:

Beets 'n Berries

Beets 'n Berries (serve with pine tree)*
An impromptu "proof of concept". :roll:
Try with a dollop (whipped or sour)
... and/or raw walnuts. 8)

Or try 1 tsp red beet powder with 1 cup unsweetened applesauce,
then upscale with red fruit like raspberries or strawberries. :D

:roll Ingredients:

1 cup cold water
2 rounded tsp guar gum
1 tbsp red beet powder
15oz can whole beets, mashed
2 bags Rose Hips & Hibiscus Tea
1 1/2 cups dried cranberries
2 tbsp apple cider vinegar

:arrow: Directions:

Shake water and guar gum in jar until gelled,
then stir in red beet powder and beet juice.

Mix ingredients in a bowl, refrigerate overnight,
then stir briefly before serving.

To minimize cooking (reduces nutrients), place bite-size pieces of eggplant,
skin side up in 1/4" of water, cover dish, and microwave 2-3 min.
Then add hot eggplant to preferred dish just cooked.

Cut skin off core with 3/4" thickness to maximize antioxidants. ;)

Growing up in the south, beans and cornbread was one of my mother's staples and it was also one of my favourites. Pinto bans have such a great flavour that in all honesty can stand on their own without a lot of spicing up but this recipe sounds delicious. I must admit I often mixed fresh chopped onion and even the coleslaw mom often provided as a side dish into the beans making a right -looking mess....but oh so yummy.

Combine 16oz jar Laura Scudder's (only peanuts) Butter
with 2/3 cup hulled sesame seeds and 2/3 cup currants.
(most "currants" are small raisins - real currants
are Dyn O Mite, nutritionally speaking) ;)

Tip: Briefly soak currants in very hot water.

serve on toasted Cinnamon Raisin Muffins, like these:

(even upscale with coffee powder)

:arrow: Microwave 2 cups half & half until steaming,
immediately stir in 1/4 cup dark chia seeds,
3 tbsp 100% cacao powder, 1/2 tsp vanilla,
and 1 1/2 tbsp sugar.

Freeze, stirring occasionally (about 8 hrs). 8)

Serve with chopped walnuts (or sliced almonds)
and a dollop or two if you dare. :roll:

Sloppy Joe Q
(brands mentioned for flavor reference)

:roll Ingredients:

1 cup tri-color quinoa
1 2/3 cups water
2 tbsp dried parsley
6 garlic cloves, sliced
1 1/2 cups diced celery
(or 1 1/2 cups diced asparagus)
1 1/2 cups diced sweet onion
2 cups prepared BBQ sauce:
(mix then chill 6oz can tomato paste,
6oz can water, 1 tsp garlic granules,
and 18oz bottle BBQ sauce*)
1 tbsp virgin olive oil

* Try Stubbs Reduced Sugar or Head Country

:arrow: Directions:

Combine equal portions tri-color quinoa
with red quinoa, then simmer 1 cup in water
until most water is absorbed (about 20 min.).

Spread parsley, garlic, celery, and onion
on top, cover pan; remove from heat when
veggies are hot (for al dente texture),
then stir into cooked quinoa.

Allow to cool, then stir in olive oil
and chilled BBQ sauce; add water for "saucy".

Serve hot on buns or in a dish as Joe Q Chili
(but also tasty served cold as Joe Q Cool). ;)


:sunflower: Also try Quinoa Tabouli (see Tabouli/Tabbouleh recipes online!)
Simmer 1 cup tri-color quinoa in 1 2/3 cups water until water absorbed,
then allow to cool before adding Tabouli ingredients. Serve or refrigerate.
Super nutritional because of all the fresh produce! ;)

Nutritious and herbaliscious ...

Prepare separate containers of fresh herb leaves*
then add a small scoop to a food serving once daily.
Place paper towel section at bottom of container
and one on top of leaves to maintain freshness.

Rinse herb bunches well before removing leaves
and refrigerate between uses.

* Try cilantro, Italian parsley, basil.

Beyond Tomato Soup

Serve with Beyond Grilled Cheese Sandwiches*
to upscale your guests' individual TV trays. :roll:
* Be creative! ;)

:roll Ingredients:

2 tbsp virgin olive oil
1 1/2 cups chopped celery
1 1/2 cups chopped sweet onion
1 cup petite green peas, thawed
10oz can tomato soup
10oz can water
1 cup chunky mild salsa
2 tbsp dried cilantro
1/2 tsp garlic granules
1/8 tsp cayenne pepper
1 1/2 tsp paprika
1 1/2 cups sliced baby bella mushrooms

:arrow: Directions:

In a large sauce pan, sauté celery and onion
in olive oil until al dente, stir in green peas,
then add remaining ingredients except mushrooms.

Stir briefly and simmer until hot,
then stir in mushrooms, simmer 5 min.

Serve hot or cool then refrigerate.
Reheat to serve or serve cold.

Seedy Energy Bites and Rose Berry Sauce,
adapted for tsunami-level swimming energy.
Serve together in a small dessert bowl. :roll

Seedy Energy Bites w/ Sesame Seeds

Combine warmed 16oz jar "Only Peanuts" Butter (or Almond)
with 2/3 cup light oat bran, 1/3 rounded cup 100% cacao powder,
1 cup currants (small raisins), briefly soaked in very hot water,
and 3/4 cup hulled seasme seeds.

Add 1/4 cup strong coffee to make mixture tacky, form into a ball;
press flat between sheets of parchment paper or plastic wrap.
Dust both sides with cacao powder, slice into bite-size pieces;
refrigerate overnight, creating a dry fudge texture.

Combine warmed 16oz jar "Only Peanuts" Butter (or Almond)
with 2/3 cup light oat bran, 1/3 rounded cup 100% cacao powder,

refrigerate overnight, creating a dry fudge texture.

Rose Berry Sauce

OB Herby Biscuits

OB Herby Biscuits (makes 6)
Serve with sharp cheddar cheese.

:roll Ingredients:

1 1/3 cups light oat bran
1 tsp baking powder
2 tbsp dried parsley
3/4 tsp garlic granules
1/2 tsp salt
1 tbsp sugar
1 cup very hot water
1/2 cup egg whites, whipped
1/4 cup oat bran to complete
1 tbsp virgin olive oil

:arrow: Directions:

Pre-heat oven to 400F degrees;
place parchment paper on baking sheet.

Combine oat bran with dry ingredients,
then vigorously stir in hot water.

Whip egg whites to foamy, stir into mixture,
then stir in 1/4 cup oat bran, then olive oil.

Spoon onto parchment paper, reduce oven to 375F
and bake 45 min.

Oregany Beans

A cold bean salad with nutritional perk,
"Good for what ails you." (they say) :roll:

:roll Ingredients:

29oz can black beans, drained
1 tsp garlic granules
1 1/2 tbsp dried oregano
2 tbsp virgin olive oil
3 tbsp apple cider vinegar
1 1/2 cups diced red bell pepper
1 1/2 cups diced sweet onion
1 1/2 cups diced zucchini

:arrow: Directions:

Assemble in the order listed, stirring after liquid added,
then gently fold in diced veggies.

Tips: Use chilled ingredients, then refrigerate final mixture.
Cut off zucchini core, leaving thick slices to dice (optional).

Hi Rod,

Thanks for sharing the new recipes! I am looking at the beyond tomato soup recipe for tonight. It is a cool rainy day and only will get rainier as the day progresses so I am thinking soup would be a great option for supper tonight. :)

I must add mushrooms to my order though... (why is it there is always one ingredient I do not have. LOL (Might be time to improvise.if the rain gets worse)
