Oatmeal Corncakes

Oatmeal Corncakes (makes four 5" pancakes)

:roll Ingredients:

1 cup very hot water
2/3 cup quick-cook oatmeal
2 tbsp oatmeal
1/2 tsp salt
1 tsp sugar
2 lg eggs, whipped
2 tbsp virgin olive oil
1 cup canned corn, drained

:arrow: Directions:

Stir 2/3 cup oatmeal into hot water,
cover bowl and let rest 3 min.

Stir in 2 tbsp oatmeal to increase fiber,
then remaining ingredients as listed.

Fry like pancakes on hot griddle.

Serve sweet, savory, or "Who can tell?"
(syrup, sour cream, cheese, whatever)

Morning Cacaophony

:roll Combine 3 cups light oat bran,
2/3 cup 100% cacao powder,
2 tbsp psyllium husk,
and 1/4 tsp salt.

:arrow: To serve, heat 2/3 cup water to simmer,
stir in 3 tbsp MC mixture, 2 tbsp sunflower seeds,
1 tsp coconut oil, and 1 tsp sugar (or sweetener).
Try with dried fruit like raisins or cranberries.

Let mixture rest 5 min., stirring a few times.
Serve milk or whatever on the side.

:idea: Try 1/3 cup unsweetened dried coconut
instead of psyllium husk powder. 8)

:idea: Also try with Chocolate Applesauce
Combine 2 cups chilled natural applesauce
with 1/4 rounded cup 100% cacao powder. :roll

Versatile 'n spicy sandwich spread.
(decrease mustard for milder flavor) ;)

:arrow: Combine 12oz container stoneground mustard,
1/2 tsp garlic granules, 2 tbsp dried parsley,
1 tsp turmeric extract powder (optional),
15oz container low-fat ricotta cheese.

Include 3 tbsp water to rinse mustard container
and hydrate dried parsley. 8)

Corn y Spurtle ( 'y' = Spanish 'and' )

When served, upscale with a side of asparagus
and/or preferred cheese if you please. :D

Or serve Corn y Spurtle Grande for special occasions.
(include cooked egg and/or breakfast meat)

:roll Ingredients:

1 cup steel cut oats, rinsed
2 1/2 cups water
15oz can non-GMO corn, drained
1 lg sweet onion, diced
1/4 tsp garlic granules
1/2 tsp sea salt
1 tbsp virgin olive oil

:arrow: Directions:

Simmer oats in water until most water absorbed,
then spread on corn, then diced onions.

Cover pan and let simmer 5 min., then turn off heat,
stir in spices with olive oil last.

Let pan rest on burner 15 min., then stir briefly
before serving (or cool then refrigerate). 8)

Flippin' PB Patties

Flippin' PB Patties

No-bake, brownie-like flippin' whatever.

:scratch: "What The Flip is this?!" Dunno :!:
Try serving chilled crumbles with applesauce
and sprinkle of cinnamon (or whatever ...
even dried cranberries!) :D

:roll Ingredients:

1 cup Seedy PB*
2 cups canned garbanzo beans, drained
1/2 cup monkfruit sweetener
3/4 cup unsweetened shredded coconut

* Seedy PB
Combine 16oz jar peanuts-only butter
with 1 1/4 cups white sesame seeds.

:arrow: Directions: (need plastic wrap,
two 9" x 12" trays & small cutting board)

In a large bowl, use pastry cutter to grind
garbanzo beans into coarse texture, then
stir in sweetener and Seedy PB.

Cover a small tray with plastic wrap,
evenly spread Flippin' mixture on tray,
cover with plastic wrap, press down with
slightly smaller cutting board.

Remove top plastic wrap, then sprinkle on
half of shredded coconut. Cover with wrap,
press down with cutting board, place other tray
upside down on top and flip 'em over.

Remove top tray and plastic wrap, sprinkle on
remaining shredded coconut. Cover with wrap,
press down with cutting board, refrigerate.

Accompany Patties with small glass of chilled Beet 'n Kefir
(quart of kefir 1% with 1 1/2 tbsp red beet powder).

then upscale with more protein and preferred green leaves:

:roll Ingredients:

16oz pkg edamame (shelled soybeans)
15oz can non-GMO corn, drained
1 lg sweet onion, diced
1 tsp sea salt
1/2 tsp garlic granules
1 tbsp virgin olive oil
Italian parsley as condiment

:arrow: Directions:

Boil frozen edamame as directed, pour off water,
immediately stir in diced onion, corn, and spices.
Cover pan and simmer 5 min., allow to cool slightly,
then stir in olive oil (retains nutrients). ;)

To serve, dollop with plain Greek yogurt
and spread on fresh Italian parsley leaves.

Note: Walking on water is a skill (they say). :roll:

Sunny Blue Crunch

While trying to find my leftover Succomame for this morning's brunch
I found leftover thawed frozen blueberries & applesauce. More dessert
than breakfast food, I upscaled it with other leftover stuff. :roll:

:arrow: Thaw 16oz pkg frozen blueberries with 2 cups natural applesauce,
then stir and keep refrigerated. 8)

For a serving of Brunch Crunch, stir in dried shredded coconut,
then top with Greek yogurt, then raw sunflower seeds.

MunchabunchaCrunch (they say) to start the day. :roll

Beet & Seedy PB

A unique chewy spread for whatever
with serious Whatsit? ambience. :lol:

:arrow: Combine 16oz jar peanuts-only butter
with 1 1/4 cups white sesame seeds.

Optional: Pour off oil from top and replace
with equal portion of virgin olive oil. Also,
add olive oil to thin as desired.

Mix 1 tbsp red beet powder with 1 cup B&S PB
and refrigerate between uses. 8)

Coconut Faux Cake

:arrow: Whisk 15oz jar of virgin coconut oil
with two 13oz cans coconut cream (all melted);
stir in 8oz bag unsweetened dried shredded coconut.
Add 2 cups dried cranberries to upscale. 8)

Spoon into small loaf pan, refrigerate overnight.

To serve, cut slice of Faux Cake, top with
natural applesauce and/or crushed pineapple,
then spread on chopped raw walnuts.

:idea: Tips: Melted coconut oil and cream
should be just thin enough to pour
(not too warm). Slice Cake thin.
Add sweetener if desired.

BBQ Saucy

Use the juice* of canned garbanzo beans
to extend/upscale commercial BBQ sauce.
* aka "aquafaba" 8)

:arrow: Combine juice from 29oz can garbanzo beans
with 6oz can tomato paste, 6oz can water,
18oz bottle commercial BBQ sauce.

:idea: To upscale (example) ...
add 3 tbsp dried parsley,
1 tsp garlic granules,
2 tsp smoked paprika,
3 tsp paprika.

Use the juice* of canned garbanzo beans
to create instant spaghetti sauce (or whatever).
* aka "aquafaba" 8)

:arrow: Combine juice from 29oz can garbanzo beans
with 6oz can tomato paste, 15oz can stewed tomatoes,
1 tsp garlic granules, 2 tbsp Italian seasoning,
2 tbsp virgin olive oil.

Refrigerate several hours for flavors to blend.

Faux Poached Eggs

Faux Poached Eggs

How many :?: One, two, three, or faux
(depending on size of sauce pan) ;)

Requires 6oz Pyrex dishes, wide saucepan
(not too deep; rocker plate in bottom helps).

:arrow: To cook ...

Heat 3/4" water in saucepan to a simmer.
Lightly oil inside of dishes with virgin olive oil.

Carefully break an egg into each dish,
then gently set into simmering water.
Cover pan and steam about 10 min.

Carefully remove dishes from pan, cool 5 min.,
then gently spoon around egg to release
(or just serve in dish). :roll

Whipped Cacao

Whipped Cacao (unsweetened dip)

:arrow: Pour 16oz container whipping cream Into a bowl
and slowly whisk in fermented cacao powder
until thick (but not too thick). Refrigerate.

Add sweetener or whatever to serve as a dip
and/or spoon into hot milk or coffee.

Whipping cream without additives is best.
Why fermented cacao? That's what I had ;)

:idea: Maybe better than a lottery (a few people win at the expense of many "investors"). On the other hand,

3/4 tsp salt (if no salt beans)
2 tbsp dried cilantro
1 tsp garlic granules
1 tsp chili powder
1 tbsp virgin olive oil
2 tbsp tahini

:arrow: Directions:

Add to food processor in order listed,
then process about 3-5 min.


Karrotamus (adapted from Southwestern Chip Dip ;- )

:roll Ingredients:

15oz can chickpeas (include juice)
1/2 15oz can pumpkin puree
3/4 tsp salt (if no salt beans)
3 tbsp dried cilantro
1 tsp garlic granules
1 tsp chili powder
2 tbsp red wine vinegar
1 tbsp virgin olive oil
2 tbsp tahini
2/3 cup finely shredded carrots

:arrow: Directions:

Add to food processor in order listed,
then process about 3-5 min.
Just stir in carrots last.

Pumpkin + Tomato Soup base for convenient conversion
to soups and stews. Even add a cup of preferred salsa
to convert to no-cook chip dip! Refrigerate until used. 8)

:roll Ingredients:

15oz can pumpkin puree
10oz can tomato soup
1 tsp garlic granules
2 tbsp dried cilantro

:arrow: Directions:

Combine well and refrigerate.

:idea: Try red chard and sweet onions sautéed in olive oil,
then stir in canned beans and Saucyness for a quick soup.
Add water or preferred broth, mushrooms to upscale; :roll
include juice of canned beans.
