"Many think that a supplement contains the same vitamins and minerals as whole foods, so why not just pop a pill? It’s because vitamins and minerals are best absorbed through food. Think of it like this - whole foods contain a mix of minerals, enzymes, fiber, and other substances that may help your body absorb and use these nutrients. Eating a well-balanced meal is much healthier than a multivitamin. It’s not clear whether vitamins and minerals have the same effect in the body when taken in supplement form."

My batch did not match the website picture ...
and with other experimentation, psyllium husk
seems unusual texture for bread and rolls.
I'll test again with less psyllium.

Red Lentil Biscuits

Post by Amigoo »

Red Lentil Biscuits (makes 9), adapted from:
https://nutritionrefined.com/red-lentil-bread-rolls/
"Red Lentil Bread Rolls"

:bana: Surprising bread texture from lentils :!:
And minimal carbs for bread plus good fiber!
Or bake as flatbread for later toasting. 8)

Re: https://medlineplus.gov/druginfo/meds/a ... recautions
Psyllium husk is also considered medication - not just food thickener.
However used, "plenty of liquids" in the diet is important :!:
Tip: Chia seeds would be similar "medication". ;)

:roll Ingredients for herb biscuits:

1 1/3 cups red lentils, soaked
2/3 cup cool water
2 tbsp psyllium husk powder
2 rounded tbsp dried cilantro
2 rounded tbsp dried chives
1 1/2 tsp baking powder
1 tsp garlic granules
3/4 tsp sea salt
1 tbsp virgin olive oil

 Directions:

Rinse then soak lentils 3 hrs. covered by 3" water,
then drain well.

Lightly oil baking sheet then dust with flour
(or use non-stick sheet or parchment papaer);
pre-heat oven to 375F degrees.

In med. mixing bowl, use hand blender to process
soaked lentils with 2/3 cup water, then vigorously
stir in remaining ingredients, olive oil last.
Let batter rest 5 min., then stir briefly.

Spoon onto baking sheet (use 2 scoops of batter
for more height, first scoop larger than next),
reduce oven to 350F and bake 50 min.
Lift with spatula just after baking.

Tasty, served with Turmeric Butter

Combine 7oz container Butter with Olive Oil,
1 tsp turmeric extract powder,
2 tbsp virgin olive oil,
2 tbsp dried parsley.

:sunflower: When cracking an egg against top edge of thin bowl or coffee cup,
cracking it diagonally (not horizontally or vertically) seems best.
Apparently, the egg's oval shape makes this possible. 8)

:sunflower: When steaming eggs in flat bottom bowl in double boiler,
steam eggs until whites appear, then add liquid egg whites.
Eggs maintain better separation during cooking
and extra whites increase protein per serving. :roll

Tip: Steamed eggs when then refrigerated
are more convenient than boiled/peeled eggs
... and stay fresher during refrigeration! ;)

Southwestern Hummus

Post by Amigoo »

Southwestern Hummus
(aka "Cannellini Canoodle") ;)

Mild flavored dip for tortilla chips,
but some prefer banana wood!
Upscale with diced jalapeños. Olé!

:roll Ingredients:

1 1/2 15oz cans cannellini beans, drained
15oz can pumpkin puree
3 tbsp lemon juice
3 tbsp dried cilantro
1 1/2 tsp garlic granules
1 tsp ground cumin
2 tsp chili powder
1 1/2 tsp paprika
1 tsp sea salt
2 tbsp virgin olive oil
1/4 cup tahini

 Directions:

In a large bowl, pureé cannellini beans,
then stir in remaining ingredients
as listed, tahini last.

Refrigerate overnight. 8)

 Who knew? Chefs called Randy? ;)
Banana wood animals chomp 'em like tortilla chips, but humans munch until the wood is softened,
then get a dip of the hummus but save that wood for the next slow munch. A culinary slow dance,
oft recommended for tender teeth (and not necessarily related to morning wood).

3. Hummus with veggies - good source of protein and healthy fats.
4. Whole grain crackers and cheese - complex carbohydrates; cheese offers protein and healthy fats.

Re: UB Cookin'

Hi Rod,

Thanks for the new recipe.
I will be visiting my children next week who appreciate hummus and tortilla chips (not banana wood so far anyway LOL)
I would like to share and try out his latest hummus recipe with them.
(On a side note... I have found my body handles cannellini beans much better than chickpeas or garbanzo beans  :) .)

 My goal was to use a whole can of pumpkin puree. The hummus was going to use chickpeas,
but I didn't have a can so I opened the cannellini beans. That can slipped out of my hand and
half of it (plus juice) fell to the floor. But that was a clue I should use 1 1/2 cans of beans!

 Somehow this troubling start at 3:00 AM suggested "Southwest" not "Mid-East" flavors
... and the beginning mess "inspired" more intense flavors, giving a decent recipe :!:
An early morning Cannellini Canoodle on the kitchen floor can be inspirational!
And some of the best recipes probably start with a satisfying canoodle. :D

drain with tea strainer, and use the grit
(stirring with spoon helps).

 Discarded mustard water can be saved
