Veggie Tofu Casserole

Walk-on-water nutrition with serious protein.

:roll In‌gredients:

16oz pkg extra firm tofu, mashed
1 cup egg whites
1 1/2 tbsp dried parsley
3/4 tsp garlic granules
3/4 tsp salt
1 tsp baking powder
1/3 cup light oat bran
2 tbsp virgin olive oil
16oz pkg frozen mixed vegetables, thawed
1 med. sweet onion, diced
shredded cheese topping

:arrow: Directions:

Pre-heat oven to 350F degrees;
lightly oil 8" x 8" deep baking dish.

Combine first ingredients as listed,
stir in olive oil, then fold in veggies;
top with cheese when foil removed.

Spoon into baking dish, cover with foil,
bake 55 min., then remove foil
and continue baking 20 min.

Spanish Peanuts Spooner
(not finger food) :roll:

:arrow: Into 2 cups roasted Spanish peanuts*
stir 2 tbsp virgin oilve oil, then stir in
3/4 tsp garlic granules, 1/4 tsp salt,
2 tsp chili powder, 2 tsp paprika,
and 1/8 tsp cayenne pepper.

:idea: Suggested serving size: 1/3 cup.
Serve with demitasse spoon (or use as
condiment for complementary dishes).

* In glass baking dish, bake raw peanuts
at 350F degrees 45 min., stirring 3 times.

Pumpkin Seed Spooner

Versatile condiment or even mini side dish
(when combined with preferred whatever),
promoting walk-on-water nutrition. :roll:

:arrow: In med. bowl, combine 1/4 cup virgin olive oil
with 16oz pkg raw pumpkin seeds, then stir in
1/2 tsp salt and 3/4 tsp garlic granules.

Optional: Stir in 1 cup minced fresh cilantro
and 2 tbsp dried cilantro (controls moisture).

Keep refrigerated. 8)

Oat Bran T-Bread

Oat Bran T-Bread (makes 9 flat rounds)

A simple flatbread with serious fiber.
To upscale, include 2 tbsp caraway seeds.

:roll Ingredients:

1 cup light oat bran
1 1/3 cups hot green tea
1/4 cup flaxseed meal
2 tsp sugar
1/2 tsp salt

:arrow: Directions:

Place parchment paper on cookie sheet;
pre-heat oven to 400F degrees.

In mixing bowl, whisk all ingredients
until porridge consistency (about 1/2 minute).

Spoon onto parchment paper, spread to 3/8" thickness
(or shake baking sheet and/or drop on counter). :roll:

Reduce oven to 375F, bake 45 min., then turn over,
removing parchment and continue baking 10 min.
(or longer for crispy).

Cranberried Apples

Seriously seedy 'n tart fruit compote.
Increase water for seedy 'n saucy. :roll:

:roll Ingredients:

16oz pkg frozen cranberries
1 1/2 cups water
1/3 cup dark chia seeds
1/3 cup cranberry seeds
2 pkts True Lemon Powder
2 med. tart red apples, diced

:arrow: Directions:

Simmer frozen cranberries in water
just until berries burst, then stir in
remaining ingredients (apples last).

Allow to cool, then refrigerate. 8)
Stir before serving.

Magic Mushroom Soup

Not those mushrooms! - portobellos,
that completed this impromptu soup concept
... but cilantro was the real inspiration. ;)

:roll Ingredients:

1 cup green lentils, sprouted*
1 1/2 cups chopped, shredded carrots
3 cups chopped portobello mushrooms
2 cups chopped sweet onions
10oz can cream of mushroom soup
1 1/2 cups chopped fresh cilantro
1/2 tsp coarse black pepper
1/2 tsp garlic granules
1 tsp cumin powder
1/2 tsp salt
2 tbsp virgin olive oil

* sprout small green lentils several days
until 1/4" sprouts form, then simmer
in 3 cups water to al dente.

:arrow: Directions:

Cook lentils separately from
carrots, mushrooms, and onions
for balanced al dente texture.

Then combine all ingredients
and simmer just until heated
(stir in olive oil after heating).

Chewy Barley

Hulled barley is ideal for creating moist, chewy grain
that requires only several minutes of cooking
with a long aftersoak (about one hour).

:roll Ingredients:

1 cup hulled barley, rinsed
2 cups simmering water

:arrow: Directions:

Stir rinsed barley into simmering water, cover pan
and cook 5 min. after simmering begins again.
Remove pan from stove, cover pan lid with
pot holder or towel and let soak one hour.

Stir briefly, then use or refrigerate. 8)

complement other protein (even extra firm tofu,
then include baby bella mushrooms). :roll

Water-diluted plain yogurt could be a substitute
for the heavy cream in the sauce. And now,
frozen petite green peas come to mind ...
suggesting Butter Tofu 'n Peas :D


For the Butter Tofu 'n Peas:

2 tbsp virgin olive oil
2 tbsp ghee (or 1 tbsp butter + 1 tbsp oil)
1 xlg onion, chopped
1 1/2 tbsp minced garlic
1 tbsp finely grated ginger
1 1/2 tsp ground cumin
1 1/2 tsp garam masala
1 tsp ground coriander
15oz can crushed tomatoes
1 tsp red chili powder
1 cup diluted plain yogurt
1 tsp dried fenugreek leaves
1 tsp salt (or to taste)
1 tbsp sugar

16oz pkg extra firm tofu, bite size
12oz pkg frozen petite green peas
3 cups baby bella mushrooms

:roll Ingredients (creates 90.666% cacao): :roll:

two 3.17oz bars Ghirardelli 86% Cacao
one 3.17oz bar Ghirardelli 100% Cacao
1 cup dried, finely shredded coconut*

Place sheet of plastic wrap on small tray.
Melt chocolate, stir in coconut, spread on tray,
cover with plastic wrap and refrigerate.

When solid, break into bite size pieces.

Simple pumpkin flatbread with baking sheet
dropped once on counter before baking. :roll:

:roll Ingredients:

1 2/3 cups light oat bran
1 cup soy milk, warmed
1/2 15oz can pumpkin puree
1/4 cup flaxseed meal
3/4 tsp baking powder
1/2 tsp salt
2 tsp sugar
1/3 cup egg whites
2 tbsp virgin olive

:arrow: Directions:

Place parchment paper on cookie sheet;
pre-heat oven to 400F degrees.

In mixing bowl, combine ingredients
one-by-one as listed (olive oil last),
stirring well each time.

Spoon onto parchment paper, then drop
on counter to flatten. Reduce oven to 375F,
bake 50 min., turn over and bake 10 min.

EZ Delicious 'n nutritious condiment. :roll
Sweetness confirms tomatoes are 'fruit'.

:roll Ingredients:
6oz can tomato paste
2 cans water
1 tbsp dried cilantro
1/2 tsp garlic granules
1/8 tsp salt
1 tbsp virgin olive oil
1 tbsp apple cider vinegar

:arrow: Directions:
Mix well, refrigerate overnight,
then stir before serving.


Tomato Paste Spread

:roll Ingredients:

Mooned Cacaophony Cake

Impromptu, no planning exploration of nutritious cacao nibs.
Top slice with two small dollops for Mooned Cacaophony Cake. ;)

:roll Ingredients:

6oz pkg raw cacao nibs
1 cup water
3.17oz 86% cacao bar

1/2 cup natural applesauce
2/3 cup light oat bran
1 tsp baking powder
3/4 tsp cinnamon
2 tbsp brown sugar
1/2 tsp salt
2 xlg eggs + 1/4 cup egg whites
1 tbsp virgin olive oil

:arrow: Directions:

Lightly oil 8" x 8" baking dish;
pre-heat oven to 350F degrees.

Pour water into medium sauce pan, stir in rinsed cacao nibs,
then cook 5 min. when nibs begin to simmer. Turn off heat,
top with cacao bar pieces and cover pan.

Stir in remaining ingredients when cacao bar melts
(olive oil last), spoon into baking dish, bake 55 min.

:idea: Simmered cacao nibs + cacao bar
could be added to other pastry recipes
(skip this cake recipe). :roll:

:arrow: Combine 12oz container Coarse Ground Dijon Mustard,
3/4 tsp garlic granules, 3/4 tsp turmeric extract powder,
2 tbsp flaxseed meal, and 2 tbsp dried cilantro.

Keep refrigerated. 8)

Koroneiki Greens

A walk-on-water condiment, first tested with Koroneiki olive oil
(you'll walk on water in the parking lot to get more ingredients). :roll:

:arrow: Combine 16oz pkg raw pumpkin seeds, 1/4 cup virgin olive oil,
3/4 tsp garlic granules, 1/2 tsp salt, 1 1/2 tbsp dried cilantro,
and 2 tbsp dried chives (fresh herbs have better nutrition
but flavors dominate mild pumpkin seed flavor). ;)
Keep refrigerated. 8)

:idea: Tips: If too dry, include 1-2 tbsp water.
If desired, skip herbs until served.

Upscale with Sesame Seedy PB*.

:roll Ingredients:

2 cups light oat bran
1 1/4 cups soy milk
1/2 15oz can pumpkin puree
1/3 cup dessicated coconut
3/4 tsp baking powder
1/2 tsp cinnamon
3/4 tsp salt
3 tsp sugar
1/3 cup egg whites
2 tbsp virgin olive oil

:arrow: Directions:

Place parchment paper on cookie sheet;
pre-heat oven to 400F degrees.

In mixing bowl, combine ingredients
one-by-one as listed (olive oil last),
stirring well each time; let rest 5 min.,
then stir vigorously.

Spoon onto parchment paper,
reduce oven to 375F, bake 55 min.

:idea: Tip: Also bake as sheath cake,
use cookie cutter to separate
and bake 10 min. for crispy.


* Sesame Seedy PB (super chewy spread)

then replace with virgin olive oil and stir in
1 cup raw sesame seeds; increase oil to thin.
Upscale with 3/4 cup raw sunflower seeds.
