Makes good base for 
Matcha Mame**
and has distinct Umame taste/texture.   
  
For appetizer or for special ceremony,
serve with steamed sea vegetable(s)
and sagacious shot of Sake (sah keh).  
 
 
  Ingredients:
3 cups  water or broth
*
1 cup  chickpea flour
1 1/2 tbsp  matcha tea powder
1 1/2 tsp  garlic granules
2 tbsp  dried parsley
3/4 tsp  salt
1/3 cup  black sesame seeds
3 tbsp virgin olive oil
* increase after cooking
to make Umame sauce
 

  Directions:
In medium sauce pan, heat water until simmering,
then whisk in the pre-mixed dry ingredients. 
Allow to cool 5 min., then stir in olive oil.
Notes: These ingredients provide more texture
and complementary flavors for chickpea flour.
For Western palates 'n plates, steamed broccoli 
or asparagus is a good "see vegetable".  
 
** Matcha Mame  (maa may)
For stew with pre-sautéed veggies
and quick-boiled edamame, include:
2 cups  shelled edamame
1 1/2 cups  chopped carrots
1 1/2 cups  chopped celery tops
1 1/2 cups  chopped sweet onion
15oz can  chicken broth
1/4 tsp  black pepper
1 tsp  ginger

Simple pumpkin flatbread baked as one round,
then rolled with pizza cutter into squares.

 Ingredients:
1 2/3 cups  light oat bran
1 cup  hot water
1/2  15oz can pumpkin puree
3/4  tsp baking powder
1/2  tsp salt
2 1/2 tsp  sugar
1/3 cup  egg whites
2 tbsp  virgin olive
1 cup  raw sunflower seeds 

 Directions:
Place parchment paper on cookie sheet;
pre-heat oven to 400F degrees.
In mixing bowl, combine ingredients
one-by-one as listed, olive oil last,
then fold in sunflower seeds.
Spoon onto parchment paper, cover with plastic wrap,
pat down with cutting board to flatten. Remove wrap,
then reduce oven to 375F and bake 55 min.

  Simmer 16oz pkg frozen cranberries
in 1 cup water until soft, then mash
and stir in 1 tbsp gelatine powder.
Then stir in 1/3 cup cranberry seeds 
and 1 pkt True Lemon Powder (optional).
Stir in 1/3 cup dessicated coconut last.
 

  Allow to cool, then refrigerate.  
Top with raw walnuts or sliced almonds 
to serve as 
Pucker Berry Pudding 
or serve as 
Pucker Berry Sundae
with strawberry ice cream.

				Mixed Veggie Fritata  (serves four)
Simple veggie pancake.
Tasty served with mild salsa.
 

  Ingredients:
1/2 cup  light oat bran
1 tbsp  dried parsley
1/4 tsp  baking powder
1/4 tsp  garlic powder
1/4 tsp  salt
2/3 cup  hot water
1/3 cup  egg whites
2 tbsp  virgin olive oil
12oz pkg frozen mixed veggies,
rinsed then microwaved to al dente.
 

  Directions:
Heat large non-stick frying pan to medium.
Combine dry ingredients in mixing bowl,
stir in hot water, egg whites, olive oil;
fold in cooked veggies without juice.
Spoon evenly into frying pan, cover pan,
reduce heat to low, and cook 15-20 min.
 

 For easy 
Veranda Veggies,
thaw frozen veggies in hot water,
spoon over mini bites of firm tofu,
microwave, drizzle with olive oil,
sprinkle with S & P, then serve
on the veranda.  
 
 
  However  
Mama's Edamame 
is more popular at the B&B down the street:
Simmer angel hair edamame pasta to al dente,
top with the thawed veggies and microwave,
then drizzle/sprinkle as desired; even serve
on the veranda if you got one.

Comfort food with nutritional focus.
If desired, freeze onion to pre-soften. 
 

  Ingredients:
15oz can  non-GMO corn + juice
1/3 cup  light oat bran
1 tbsp  dried cilantro
1 tbsp  dried parsley
1/2 tsp  garlic granules
1/4 tsp  salt
3 lg  eggs + 1/3 cup egg whites
1/4 cup  light oat bran
2 tbsp   virgin olive oil
1 med.  sweet onion
 

  Directions:
Dice sweet onion and freeze overnight;
separately refrigerate canned corn + juice, 
1/3 cup oat bran, and herbs+spices.
Lightly oil 8" x 8" baking dish;
pre-heat oven to 375F degrees.
Briefly microwave onion to thaw. 
In a large bowl, whisk eggs, 
stir in refrigerated oat bran mixture,
then 1/4 cup oat bran, and olive oil,
folding in diced onions last.
Spoon evenly into baking dish,
reduce oven to 350F, bake 50 min.

I would like to make the Mixed Veggie Fritata for Mom.  I think I am boring her to death with my cooking these days and need to put more thought and interest into what we eat.  I like cranberries so looking to try the Pucker Berry Sauce recipe too.  (Love that Name 

  so true...) Only one fruit might pucker you more...Crabapples.  It used to be a popular yard tree when I was a kid as it bloomed simply gorgeous in the Spring.  The only drawback was in late Summer when the fruit ripened and dropped. It would attract Yellow Jackets.

Super quick 'n easy cabbage/kraut synergy.
Sprinkle with sunflower seeds when served.
To upscale, top with Greek yogurt
then sprinkle with dill weed.   
 
 
 
  Ingredients:
med. head  red cabbage, finely shredded
15oz can  shredded sauerkraut
1 1/2 tbsp  red beet powder
1 1/2 tbsp  caraway seeds
3/4 tsp  garlic granules 
 

  Directions:
Rinse then microwave red cabbage
to desired texture (try al dente).
In a large mixing bowl, 
combine remaining ingredients,
then stir in cooked red cabbage.
Refrigerate overnight.

Refrigerate to create instant meals.   
 
Substitute heated tofu for egg if desired 
(or refrigerate combo, microwave later). 
 

  Ingredients:
steamed eggs + whites
12oz pkg  frozen mixed veggies
med. sweet onion, diced
 

  Directions:
Lightly oil heatproof bowl, carefully crack eggs
into bowl, place in double boiler and steam 
until whites start cooking (maintains separation).
Add liquid egg whites to cover, finish steaming.
Rinse, then steam frozen veggies in pan
with small amount of water. Add diced
onion before completely cooked.
Serve scoop of veggies over one egg
or refrigerate for quick meal later 
(microwave briefly).
Drizzle with olive oil, sprinkle with S&P.
Cherry tomatoes on the side to upscale

I would like to try the Appley flatbread this week. I haven't been able to find the oat bran at the small grocery store I have been shopping at, though. (It is close by. I can only leave Mom for a very short time.) 
There are other recipes using oat bran that you have shared that I used to enjoy making when I lived in Australia too so I may need to order it from Amazon.
