:idea: Well ... at least look better, with results relative to your starting point.
Food options seem limited, considering many foods having good nutrition!
And changing long-perfected :roll: food/exercise habits is not that easy,
but is still doable according to many who accepted the challenge. ;)

Blue Chia Pudding

Blue Chia Pudding

:roll Ingredients:

1 cup cool water
3 tbsp black chia seeds
2/3 cup blueberry pie filling
10oz pkg frozen blueberries, thawed

:arrow: Directions:

Stir chia seeds into water and let soak 30 min.,
stirring several times. When completely hydrated,
cover bowl and refrigerate overnight.

Stir pie filling into seeds, then thawed blueberries.
Keep refrigerated between servings.

:idea: While reducing daily carbs is the necessary goal (requiring significant change of dietary habits), minimizing carbs per meal
(to complement available insulin and cell's insulin resistance) helps maintain a lower A1C (three-month average blood sugar).
Also, doctors often assume that dietary habits will not change and prescribe medication accordingly. :roll:

Pre-packaged sliced cheese is often healthy, but might contain too much saturated fat
as well as calories! To "have your cheese and eat it too", immediately after purchase,
slice the stack in half, then peel off half slices as desired. The half slices help
minimize rationalization for consuming the entire slice (or three). :roll:

I love your idea for creating half slices of cheese. Its so simple I can't believe I never thought of it. (I have a problem in this area. :shock: ) So I will be implementing this now when ever I buy sliced cheese. Thank you.

Amazing Tomato Soup

Souper EZ meal convenience
with unexpected flavor synergy :!:

:arrow: Combine 10oz can tomato soup
with 10oz can of water, 1/3 cup half & half,
1/2 tsp garlic granules, 1 tsp paprika,
1/2 cup Chunky Mild Salsa,
and 1 tsp dried basil.

Heat on stove or in microwave
just until very hot.

:idea: Interesting discussion about Metformin (Glucophage). Although this article claims that prediabetes is not a disease, it seems very indicative of the path to diabetes (especially since significant changes to diet and more exercise are not easily accepted by prediabetics). :roll:

Sunny OBO Muffins (makes 12 muffin mounds)

Oat Bran Only (no wheat flour!) plus sunflower seeds
(part of oat bran is pre-soaked). Dense & moist,
reminiscent of green pastures. :roll:

:roll Ingredients:

1 cup light oat bran
1 cup warm water
1/3 cup egg whites
1/3 cup half & half
2/3 cup natural applesauce
1/4 cup brown sugar

1 2/3 cups light oat bran
(or 2/3 cup oat flour instead of bran)
2 tsp baking powder
3 tsp cinnamon
1/2 tsp salt

1 tbsp virgin olive oil
3/4 cup sunflower seeds

:arrow: Directions:

Lightly oil a non-stick baking sheet;
pre-heat oven to 400F degrees.

In a large bowl, combine dry ingredients.

In a medium bowl, combine liquid ingredients,
then pour into dry mixture, stir to combine,
then vigorously stir in olive oil,
then fold in sunflower seeds.

Let batter rest 5 min., stir briefly,
then spoon batter onto baking sheet.
Reduce oven to 375F and bake 40 min.

:idea: Serve with natural applesauce,
sprinkled with cinnamon. 8)

Chocolate Fingerpan Cakes (makes seven 6" fingercakes) :D

(adaption of BasíC Flatbread and from the school of
"Never Let A Good Recipe Go Unchallenged") :roll:

Nutritious buckwheat enriched with 100% cacao.
Super EZ recipe and good source of soluble fiber!
Super nutritious served with raw walnuts. :roll

:roll Ingredients:

1 cup buckwheat flour
1/3 cup light oat bran
1/3 cup 100% cacao powder
1 1/2 tsp baking powder
1 1/2 tbsp sugar
1/4 tsp salt

1/2 cup egg whites
1/2 cup half & half
2/3 cup water

1/3 cup natural applesauce
2 tbsp virgin olive oil

:arrow: Directions:

In a medium bowl, combine dry ingredients.
In a small bowl, combine liquid ingredients,
stir into dry mixture, whisk in applesauce;
whisk in olive oil last.

Cook as pancakes on a pre-heated griddle.
Batter should pour easily (add water if desired).

Lefty's Lentil Loaf

Leftover Lefty's trademark casserole (even upscale
with sliced green onions and baby bella mushrooms). ;)

:roll Ingredients:

1 1/2 cups green lentils
2 cups simmering water
1/2 cup oat flour
2/3 cup cool water
3 tbsp virgin olive oil
3/4 tsp cumin powder
1 tsp garlic granules
1 1/2 tsp thyme
1 tsp salt

3 cups chopped carrots
3 cups chopped asparagus
2 lg sweet onions, chopped

:arrow: Directions:

Lightly oil a 3 quart baking dish;
pre-heat oven to 350F degrees.

Simmer lentils in water until water is absorbed,
then stir in extra water and oat flour, followed
by olive oil, herbs and spices.

Spoon mixture into a large mixing bowl
and fold in chopped veggies (a good time
to use your hands instead of large spoon).

Spoon mixture into baking dish,
creating a rounded top. Cover dish
and bake 1 hr. 20 min.

Shorty's Lentil Loafer

Shorty, brother of Leftover Lefty, was the inspiration for Lefty's Loaf.
However, Shorty's short-order trademark was convenience cooking,
as exemplified by this simpler, quick 'n easy recipe. 8)

:roll Ingredients:

1 cup green lentils
2 cups fresh water
1/2 tsp cumin powder
3/4 tsp garlic granules
1 1/2 tsp thyme
3/4 tsp salt
1 1/2 cups shredded carrots
2 med. sweet onions, chopped
1 1/2 cups chopped broccoli
2 tbsp virgin olive oil

:arrow: Directions:

Lightly oil a 2 1/2 quart baking dish;
pre-heat oven to 350F degrees.

Spread rinsed lentils on bottom of baking dish,
gently pour on water, then sprinkle/spread on
ingredients as listed.

Cover dish and bake 1 hr. 30 min.,
then stir briefly before serving.

:idea: Or skip the broccoli and and stir in
3 tbsp dried parsley just after baking.
Serve with fresh orange slices. :roll

Not revealed with this new recipe is increasing belief that anything made with flour from ANY grain (oat flour in the previous Lefty's Lentil Loaf) is not good for a diabetic! While a grain may be nutritious, its flour digests faster, causing more rapid increase in blood sugar. And most grains have a higher Glycemic Index than many foods! :(

:idea: Shorty's Lentil Loafer will become a staple with occasional substitution of veggies and spices.
Also, coarsely ground grains are better, but don't be so gay with them (limit serving size). :roll:

but there are many kinds of pasta ... and this recipe could substitute
olive oil dressing for the sour cream and coleslaw ... and include
one of the nutritionally-boosted flour noodles (aka "pasta"). :roll
