WTF Cornfield Loaf
Without-The-Flour chunky cornbread,
with lotsa cornmeal and canned corn;
like the whole corn field, WTF

To upscale, add 1 cup shredded cheese
and 2/3 cup diced jalapeño peppers to batter
during final stir (fold in). Olé

Ingredients:
1 cup cornmeal
2/3 cup light oat bran
1/2 tsp garlic granules
1 1/2 tsp baking powder
1 tbsp sugar
3/4 tsp salt
2 tbsp dried chives
2 xlg eggs, whisked
1/3 cup egg whites
liquid from canned corn
1/2 cup half & half
3 tbsp virgin olive oil
15oz can non-GMO corn
1 large sweet onion, diced

Directions:
Preheat oven to 375F degrees;
lightly oil 8" x 8" baking dish.
Combine dry ingredients in a large bowl.
In a small bowl, whisk eggs and whites.
Drain corn juice into another small bowl,
microwave to "hot", stir in half & half,
then stir into dry ingredients.
Stir in whisked eggs, then olive oil,
then fold in corn and diced onion.
Let batter rest 5 min., then stir.
Spoon evenly into baking dish,
reduce oven to 350F; bake 55 min.
Melt cheddar cheese on top (optional).
