:idea: Even nutrient dense foods (like fruits) that can cause unwanted glycemic response
can be moderated with smaller portions, the goal being to limit a meal's carbohydrates
to reduce that meal's glycemic response. A personal glucometer can help achieve control
and eventually make such control more intuitive with less testing. ;)

Pumpkin Raisin Bramble

Pumpkin Raisin Bramble

Hearty pumpkin raisin muffin batter, moistened with pumpkin applesauce,
then spooned onto a floured baking sheet in circular rounds mounded ...
... or rambling rows ... or bumpy logs ... or just any brazen bramble. :roll:

:roll Ingredients:

1 2/3 cups light oat bran
2/3 cup brown rice flour
1 1/2 tsp baking powder
2 tsp ground cinnamon
2 tbsp white sugar
1/2 tsp salt

2 xlg eggs
1/4 cup water
1/3 cup half & half
1 cup pumpkin applesauce*
2 tbsp virgin olive oil
1 2/3 cups dark raisins, rinsed

* 15oz can pumpkin puree and 1 cup natural applesauce

:arrow: Directions:

Lightly oil a baking sheet and dust with flour;
pre-heat oven to 400F degrees.

In a large bowl, combine dry ingredients.
Soak raisins in hot water 5 min., then drain.

In a medium bowl, whisk eggs, then whisk in
water and half & half. Pour into dry mixture,
stir to combine, then stir in pumpkin applesauce,
then olive oil. Finally, fold in rinsed raisins.

Spoon onto baking sheet as desired,
reduce oven to 375F and bake 40 min.
Immediately loosen with a spatula.

Tips: Use brown rice flour to dust baking sheet.
Add shredded coconut to leftover pumpkin applesauce
for a dessert; top with whipped cream and cinnamon.

Quintessential Quinoa

Quintessential Quinoa

A super-versatile dish for many uses!

:roll Ingredients:

1 2/3 cups water, simmering
1 cup tri-color quinoa, rinsed
1 med. sweet onion, diced
1/2 tsp garlic granules
2 tbsp dried parsley
3/4 tsp salt
2 tbsp virgin olive oil

:arrow: Directions:

When water is simmering, briefly rinse quinoa
then stir into simmering water. Cook until
water is absorbed (about 20 min.).

With pan still heating, stir in diced onion,
then garlic, parsley, and salt;
stir in olive oil last.

Cover pan, remove from heat
and let rest at least 5 min.

Serve hot ... or cool, then refrigerate
in a covered container for later use.

:roll Try an EZQ Scramble:

Mix 1 egg, 1 egg white, and 1 tbsp half & half,
then pour into oiled 'n heating frying pan
and heat until sides begin to cook.

Spread on one serving of warmed QQuinoa,
cover pan, and finish cooking (about 5-10 min.,
but don't cook too fast).

Serve with mild salsa (or whatever).

even ham can be "Later dude!" (add cooked ham when reheating). ;)

OMG :!: No garlic :?: :!: A soup without garlic during lockdown is so "at risk". :shock:

Split Pea And Spam? Maybe, but SPAS is definitely not SPA's quality ("Later dude!"). :roll:

Who knew :?: :!: Cooked wild rice complements these flavors, but "Later dude!"

You must have read my mind. I was thinking that with a cold snap coming this weekend, pea soup would taste good. :D I am even sitting here with grocery list in hand... so good timing my friend. The other new recipes above tickle my fancy as well. I may in fact, make the Quintessential Quinoa in a few minutes. :mrgreen: :bana:

QQ Burgers

QQ Burgers (pronounced "Double Q Burgers")

Pre-baked Quintessential Quinoa with extra ingredients
to create burger-like texture. Serve hot as a loaf or cool
then refrigerate; then briefly fry patties in oil to reheat.
:scratch: Then top with melted cheese?
Does a bear sit in the woods?! ;)

:roll Ingredients:

1 2/3 cups water, simmering
1 cup tri-color quinoa, rinsed
1/2 tsp garlic granules
2 tbsp dried parsley
3/4 tsp salt
1/2 cup light oat bran
3 tbsp virgin olive oil
1/3 cup brown rice flour
1/3 cup egg whites
1 med. sweet onion, diced
(or half diced, half minced)

:arrow: Directions:

Add water to a large sauce pan and heat.
When water is simmering, briefly rinse quinoa
then stir into simmering water. Cook until
water is absorbed (about 20 min.).

When QQ is almost cooked, heat oven to 350F;
lightly oil 8" x 8" baking dish.

Turn off QQ heat but leave pan on burner.
Stir in herbs & spices, then well stir in
remaining ingredients in order listed
(helps moisturize properly).

Spoon mixture into baking dish,
press down firmly with a spatula,
then cover with foil and bake 45 min.
Remove foil and bake 10 min. to brown.

Serve hot ... or cool, then refrigerate
in a covered container for later use.

:idea: Not a perfected recipe, but excellent starter recipe,
just awaiting all the creativity possible* by home chefs :!:
This mixture holds together well after refrigeration,
then brief frying in a covered pan. ;)

* both by herb/spice combinations as well as
how served (condiments 'n accompaniment)

or 1/2 cup egg whites (instead of 1/3 cup) ...

Having rationalized that a crunchy cookie (or two) are what I need to calm pre-breakfast hunger,
I now discovered that 1/4 cup warm black-eyed peas (plain, just boiled) are equally effective. :roll
Their very mild flavor plus great nutrition neutralize the cookie rationale ...
and they're even tasty with that first cup of coffee.

Now to make the same substitute for most cookie hunger. :duh

Bodacious Buns (real story of why burgers are in buns)

A long time ago, people ate food with their fingers. 8)
When bread was invented, cave dwellers put juicy food between
slices of bread to eat with their fingers. Then utensils were invented
for more hygienic dining. Of course, most people still preferred to
eat some meat with their fingers, so buns were invented. :roll

Even today, some buns are more bodacious than others.

Pumple Sauce

Pumple Sauce

Combine 15oz can pumpkin puree with 24oz jar natural applesauce.
For dessert upgrade, add shredded coconut to a serving of sauce. :roll
If desired, serve with a dollop of whipped cream.

Pumple Saucekins (current version of Pumpkin Muffin Logs)
Muffin top batter, spread in rows, sliced after baking.

:roll Ingredients:

2 3/4 cups light oat bran
1 1/4 cups brown rice flour
4 tsp pumpkin pie spice
2 tsp baking powder
3 tbsp brown sugar
1 tsp salt

1/3 cup egg whites
2 xlg eggs, whisked
1 cup pumple sauce
1/3 cup half & half
1/2 cup cold water
2 tbsp virgin olive oil
1 1/3 cups dark raisins, rinsed

:arrow: Directions:

Lightly oil a baking sheet and dust with flour;
pre-heat oven to 400F degrees.

Soak raisins in hot water 10 min, then drain.
In a large bowl, combine dry ingredients.

In a medium bowl, whisk eggs, then whisk in
remaining ingredients except olive oil and raisins.
Pour into dry mixture, stir vigorously to combine,
then add olive oil and stir well until mixed.

Avocado Spread (a quick test with good overnight result)

Mash two medium avocados (not too ripe) with 1/2 tsp garlic granules,
then press mixture into a chilled glass container and drench top
with extra virgin olive oil. Refrigerate, covered, between uses.

Tip: Cut avocado in half, cutting around seed,
twist halves in opposite direction to separate,
then remove seed and scoup out flesh.

Grilled Cricket Fingers

Grilled Cricket Fingers (brands mentioned as reference)

Slices of Ezekiel 4:9 Flax Bread grilled on both sides in Turmeric Butter, then sliced.
Finger food to be served with crispy crickets but also satisfying as "french fries".
Upscale with sprinkles of Parmesan cheese. :roll

Turmeric Butter

Combine 13oz container Land O'Lakes Butter with Olive Oil,
1 tsp garlic granules, 1 tsp cayenne pepper, 4 tsp paprika,
and 1 tsp turmeric extract powder*.

* empty four 600mg capsules Solaray Turmeric Extract Powder

Quality apple sauce (no added sugar, organic apples) provides good fiber!

Boost that fiber with chia seeds and a sprinkle of cinnamon:
Mix 1 tbsp chia seeds and 1/3 cup chilled applesauce,
then drink water, juice, or green tea. :roll
