Sweet Italian Saucy

Sweet Italian Saucy

Quick 'n easy tomato sauce with Italian flavor,
more robust texture, and mild sweetness.
They say it complements green banana,
mushrooms, and/or steamed eggplant. :roll:

:roll Ingredients:

1 cup natural apple sauce, chilled
6oz can tomato paste
6oz can cold water
1 tbsp Italian seasoning
1 tbsp dried parsley
1/2 tsp sea salt
1 tsp garlic granules
1 tbsp virgin olive oil

:arrow: Directions:

Stir together applesauce, tomato paste, water,
then stir in remaining ingredients, olive oil last.
Refrigerate overnight for flavors to blend. :love

Serve cold, hot, or Goldilocks with whomever,
whatever, wherever (find your sweet spot). ;)

Vroomité (a snitch of culinary cacaophony,
with flavors not too distant from a Mexican Molé) :D

:arrow: A daily spooner of vitamins/mineral/antioxidants,
with good potential as base for dips, sauces, glazes.
:arrow: Combine with equal portion of commercial tomato
sauces to reduce typical sodium and sugar while
increasing depth of flavors and nutrition.

:roll Ingredients:
6oz can tomato paste
2 cans hot, strong green tea
3/4 tsp turmeric extract powder
3 tbsp 100% cacao powder
2 tbsp dried cilantro
1 tbsp red beet powder
3/4 tsp garlic granules
3/4 tsp cumin powder
3/4 tsp cinnamon
1/2 tsp sea salt
2 tsp honey
1 tbsp virgin olive oil

:arrow: Directions:
Whisk dry ingredients into hot tea, then tomato paste,
then remaining ingredients with olive oil last. Refrigerate.

:idea: For Vroomité with Seedy Finesse (extra gamey), try
1/4 cup dried fennel seeds soaked 5 min. in 1/3 cup hot water,
then drained and stirred into completed tomato mixture. :roll

Hi Rod,

I have been enjoying the new recipe additions to this thread. They are now recorded in the Recipe index and I wish to apologize for my tardiness. My mom and dad have been having a really tough time with their health and I have been a bit stretched.

Some of the new recipes I find fascinating like the Frozen Celery and Sauce! That one is definitely a must-try. Who would have thought.. :shock: :D

I also would like to learn more about cadmium and its effects on the body as My sister and I consume a good amount of Spinach, carrots, and sweet potatoes. (mostly spinach) My parents both suffer from Dementia and I would certainly like to feed them Dementia healing foods if at all possible when they come home to live with me. Trying to eat well can really be confusing and make your head spin. :shock:

Celery Lime Sauce

Celery Lime Sauce
(brands mentioned for ingredients reference)

When serving, stir in almost thawed riced broccoli
to upscale this raw veggie nutrition. To superscale,
then stir in applesauce-soaked raw almonds. 8)

:roll Ingredients:

1 med. bunch leafy celery
1 lg Granny Smith apple
1 cup cold water
juice of med. lime
(or 4 pkts True Lime powder)

:arrow: Directions:

Coarse cut medium bunch leafy celery,
toss in lotsa salty water, then drain well.
Slice medium Granny Smith apple.

Place 1 cup cold water in blender,
slowly blend in celery pieces,
then apple, then lime powder.

Refrigerate mixture until chilled,
Freeze in serving size batches
or use within two days.

Super easy snack with green tea flavor/nutrition.

:arrow: Stir 1/2 tbsp matcha (green tea powder)
into 2 cups chilled natural applesauce,
then stir in 1/2 cup raw almonds.
Refrigerate overnight.


Almond Cacaophony :roll

Super easy snack with dark chocolate flavor/nutrition.

:arrow: Substitute 1 tbsp 100% cacao powder for matcha.

Sunny B'fast Spooner

Chewy steel cut oats with crunchy sunflower seeds.

:arrow: Simmer 1 cup rinsed steel cut oats in 2 1/2 cups water 15 min.

Turn off heat, stir in 1/4 tsp salt and 1 cup rinsed sunflower seeds,
then let covered pan rest 1 hour. Zzzzzz

Serve 1/2 cup sprinkled with cinnamon, and with
slices of fresh apple (use as spoons). 8)


No Mush Spooner

:arrow: Soak overnight 1 cup rinsed steel cut oats in 3 cups water,
drain and rinse, then simmer 10 min. in 2 cups water.

Turn off heat, stir in 1/4 tsp salt and 1 cup rinsed sunflower seeds,
then let covered pan rest 1 hour. Zzzzzz

Southwestern Tabbouleh

Chewy einkorn (wheat) with southwestern flavors.

:roll Ingredients:

3/4 cup einkorn, soaked
1 1/4 cups water
1 med. sweet onion, diced
1 1/2 tbsp dried cilantro
1 cup chunky mild salsa
3/4 tsp garlic granules
1/2 tsp salt
1 tbsp virgin olive oil

:arrow: Directions:

Soak einkorn overnight in lotsa water,
then drain, rinse, and drain well.

Simmer soaked einkorn in water 15 min.,
then stir in remaining ingredients, olive oil last
(simmer longer for less chewiness).

Turn off heat and let covered pan rest 20 min.,
then stir before serving. Oléh! ;)

might transform this diet into the "My Mediterranean Diet"

I was just thinking about the Mediterranean diet yesterday but hadn't the time to look it up. I remember you speaking of it before and it sounded impressive. Thank you for posting information concerning the food list again. I find it very helpful as I consider what I wish to eat in the future.

Modern Gladiator Stew

Steel-cut oats with complementary flavors and maximum chew.
Serve with boiled egg or plain Greek yogurt to increase protein.

:roll Ingredients:

3/4 cup steel-cut oats, rinsed
1 3/4 cup water
1 med. sweet onion, diced
15oz can non-GMO corn, drained
1 1/2 tbsp dried parsley
1/2 tsp garlic granules
1/2 tsp sea salt
1 tbsp virgin olive oil

:arrow: Directions (stir after rest):

Bring oats and water to soft boil,
spread on remaining ingredients
except olive oil, then cover pan,
turn off heat and let rest 30 min.

Stir in olive oil and serve
(or cool, then refrigerate).

(add a bit of sweetness for less serious). ;)

:roll Ingredients:

16oz container 2% Plain Greek Yogurt
1/3 rounded cup 100% cacao powder
1/3 rounded cup natural applesauce
1/3 cup half & half

:arrow: Directions:

Stir cacao powder into cold yogurt,
then half & half, then applesauce.
Refrigerate overnight, then stir briefly,

Pumpkin Cupboard Muffins

Pumpkin Cupboard Muffins (makes 9)

Custom recipe then with substitutions
of what was available in the cupboard. :roll:
Moist & dense with coconutty ambience
(to upscale, serve with raw walnuts).

:roll Ingredients:

1 cup dried, finely shredded coconut
15oz can pumpkin puree
1/3 cup brown sugar
2 xlg eggs + 2 xlg egg whites
1/3 cup light oat bran
1 1/2 tsp pumpkin pie spice
1 tsp baking powder
1/2 tsp sea salt
2 tbsp virgin olive oil

:arrow: Directions:

Pre-heat oven to 375F degrees;
lightly oil and flour baking sheet.

Vigorously stir ingredients as listed,
olive oil last, then let rest 5 min.

Stir briefly, then spoon batter
onto baking sheet as muffin tops.

Bake 40 min., let cool briefly
then lift with spatula.

Jump out of bed when the alarm goes off,
immediately walk to the kitchen cupboard,
get can of pumpkin puree, empty into bowl,
then stir in other stuff as you think of it. :roll:
(get dressed, etc. while spooner is baking)

:roll Ingredients:

15oz can pumpkin puree
2/3 cup light oat bran
1/3 cup brown sugar, packed
2 xlg eggs + 1/3 cup egg whites
1/2 cup half & half
1 1/2 tsp pumpkin pie spice
1 1/2 tsp baking powder
1/2 tsp sea salt
1 tbsp virgin olive oil

:arrow: Directions:

Pre-heat oven to 375F degrees;
lightly oil 8" x 8" baking dish.

Vigorously stir ingredients as listed,
olive oil last, then spoon batter
evenly into baking dish.

Bake 45 min.

Super convenient base for other dishes
(add diced veggies, chili sauce, whatever).
Even use as hamburger helper! :lol:

:roll Ingredients:

1 cup red quinoa, rinsed
1 1/2 cups water
3/4 tsp sea salt
2 tbsp dried cilantro
3/4 tsp garlic granules
1 med. red onion, diced
1 tbsp virgin olive oil

:arrow: Directions:

In med. saucepan, bring water to simmer,
stir in rinsed quinoa and cook 10 min.

Then spread on remaining ingredients,
cover pan and cook 3 min., stir briefly,
turn off heat and let rest covered 20 min.
(stir oil in after rest for more flavor) ;)

A very tasty cold dish, served over cooked garbanzo beans
with diced, raw zucchini and preferred cheese! :roll

:arrow: Soak 3 tbsp fennel seed in 2/3 cup very hot water,
then stir this, 6oz can tomato paste, 2 tbsp dried cilantro,
3/4 tsp garlic granules into sauce; refrigerate overnight. 8)

EZ Saucy Blueberries

EZ Saucy Blueberries

A nutritious treat served with raw walnuts :!:

:arrow: Thaw 10oz pkg frozen blueberries in bowl,
then stir in 1/4 cup hydrated guar gum*, then
True Lemon powder (or 1/2 tsp lemon oil).

* Add 1 1/3 cups cool water to 2-cup jar with lid,
sprinkle on 3 rounded tsp guar gum powder,
attach lid and vigorously shake to thick gel.

Clean lid, reattach and keep refrigerated.
Use as thickener for whatever (or lubricant
to remove rings or whatever). :roll

I hope to try the EZ Saucy Blueberries recipe this week. Do you think it would taste good paired with Greek Yogurt?

With sugar it's almost like canned blueberry pie filling,
but more diabetic friendly without the sugar. ;)

:lol: I'm still avoiding the temptation
to spoon this over vanilla ice cream,
but plain Greek yogurt sounds tasty :!:
