Green Ranch Beans

A "comfort food" recipe with appealing synergy of the two main ingredients
(Ranch Style Beans and Spinach Soufflé). Substitutions are possible but the
flavors and textures of these brands are ideal! 8)

:roll Ingredients:

15oz can Ranch Style Beans
12oz pkg Stouffer's Spinach Soufflé (frozen)
1 lg sweet onion, chopped
2 tbsp virgin olive oil
3 tbsp water

 Directions:

Thaw Spinach Soufflé in microwave on medium power (about 5 min.).

In a medium sauce pan, sauté chopped onion in olive oil;
stir in water when onion is translucent.

Spread Ranch Style beans on top, then spoon on Spinach Soufflé.
Cover pan; simmer until ingredients are heated (do not stir).

Serve from the sauce pan or ladle into a serving dish,
keeping Spinach Soufflé on top.

Serve with hot cornbread or over just-cooked rice.

Tips:
1) If desired, top with shredded cheddar cheese.
2) Instead of microwaving, thaw Spinach Soufflé in the refrigerator a few days before using.
3) For better presentation, spread sauteéd onions on the bottom of a lightly oiled baking dish,
spread beans on top, then spoon on Spinach Soufflé; cover baking dish and finish cooking
in a preheated oven (about 35 min. at 325F degrees).

:sunny: A diabetes discovery journey (type of carbs) ...

More evidence that type of carbohydrate (wheat) matters as much as quantity :?:

One hour after an all-veggie lunch*, two small peanut butter sandwich cookies were dessert. My blood sugar 1 1/2 hours after cookie consumption should not have been so high relative to the quantity of those cookie carbohydrates; carrots in the steamed veggie medley are also suspect. ;)

* Starting blood sugar: 118 (6.6)
1 1/2 hrs after cookies: 135 (7.5)

Thanks Rod! I enjoy green beans...one of my favorite vegetables. I'll look for a spinach souffle. They don't sale Stouffer's products at my local grocery stores, but I suspect I'll find a spinach souffle somewhere.

Was the peanut butter sugar free?

Sandy,

The two cookies had 7g non-sugar carbs; 4g sugar carbs for 11g total.
Not a diabetes friendly dessert ... since serving size is 6 cookies :!:

I've observed that sugar carbs seem less problematic than grain carbs
because sugar carbs digest quickly and are moderated by urination.
However, grain carbs seem "the gift that keeps giving" (IMO).

:finger: My daily goal: Try to eliminate all sugar and most grain carbs,
but keep carb level high enough to maintain sufficient energy.

Hi Rod,
We're seeing that too here with what we are eating. Been raining in the abuses this week and starting to see some better results.
Less grain and sugar is our goal and some day hope to eliminate them too. The hard part is in the ole head... We've both been brought up to view bread/ grain as a delicious staple...sigh
Thanks for all the information you provide through your own trial and error.

:sunny: A diabetes discovery journey (fiber) ...

"Who can tell?" A daily serving of 1 tbsp coconut MCT oil (in morning coffee)
plus 1/3 cup roasted, unsalted almonds (later snack, provides protein+fiber)
seem to reduce need for fiber supplements. 8)

More research is needed to prove cause & effect. ;)

Entrepreneur Alert :!: (aka "kitchen tip")

An old wash cloth (terry cloth, used as a cleaning rag for weeks)
makes a great back scratcher with its very rough surface
... when wrapped around a large wooden spoon. :roll

Been there :!: Doing that :!:

Entrepreneur Alert :!:

Re: https://draxe.com/mct-oil/

 With the health benefits of coconut MCT oil well-touted, "Slurpin' Coffee" (1-3 tsp MCT added)
may become a popular drink in restaurants, where slurpin' is socially acceptable for first sips
(to drain any MCT droplets on top of the coffee ... if desired)

Tip: MCT oil has little flavor ;)

Beet Sauerkraut

Re: https://cookspantry.com/products/organic-sauerkraut
(found locally, but imported from Poland) ;)

OMG :!: 24 one-oz servings per jar!
LOL - I might get 8 per jar ... it's just that tasty!

 To stretch it and reduce the sodium, shred and steam a small head of red cabbage,
then chill out ... while the cabbage chills in (the refrigerator). Then mix 'em.

Re: http://www.dailymail.co.uk/health/artic ... blems.html

 Turmeric stains easily! - a yellow belly at the pool might reveal your "medicinal basting",
but 1 1/2 tsp in a container of Tom Thumb's Signature Stoneground Mustard with Horseradish
may be a medicinal condiment! If desired, thin a bit with Raw Apple Cider Vinegar.

Try with Starkist Gourmet Boneless/Skinless Sardines ... or oysters. ;)

 No yellow belly here, but a pair of yellow tightie whities a few years ago
was a lesson in wearing chef's clothing when experimenting late at night.

Note: Substitute brands as desired.

"Don't moo the chicken!"

 It's easy to associate eggs with dairy products, but chickens are not related to cows!
Therefore, eggs are not "dairy products" ... but dairy marketing seems to infer that
because chickens often live on farms, because stores stock eggs near milk & cheese,
and because eggs are often cooked with foods that include milk.

:!: The point? When considering dairy product allergies (like cow's milk ; - )
and associated immune system problems, don't moo the chicken.

 Mix together ...
1 quart, chilled SO Delicious Coconut Milk (unsweetened)
2 tsp Republic of Tea Matcha (stone ground green tea powder)
30g packet Jay Robb Whey Protein (vanilla)

 Tips: Focus is on nutritional benefit of matcha.
Use blender if tea powder not mixed as you prefer.

Mars is usually associated with the color red,

That's some great timing, Rod! I just reminded last night about the benefits of matcha green tea. But not being one who enjoys the taste of green tea I was wondering how I could use it, but disguised. Voila! And there you are with the perfect recipe.

Cover pan and simmer until all ingredients are heated.
Stir briefly into serving bowl for family-style enjoyment.

Note: zuchinni/onion mixture will have al dente texture.

Cilantro Whatsit

Fresh combo that's a condiment, side dish, or colorful "Who can tell?".
"Whatsit" can be a recipe category reserved for bold experimentation.
Let the home chef explore and create without apologies :!:

 Combine two bunches of fresh cilantro (tops rinsed & chopped)
with preferred portions of chopped bell peppers (all colors),
chopped zucchini, diced red onion, and sliced raw almonds.

Serve chilled, then drizzled/sprinkled with whatever.
"Whatsit?" Who can tell, but nutrition is the focus.

Tips: Bold addition/substitution of ingredients encouraged. :roll
Very tasty served with cherry tomatoes. ;)

blanched before packaging). Cook as directed, then drain & chill.

Tip: Try with Bragg's Liquid Aminos (soy sauce)

 Who knew :?: :!:

Our local store sometimes discounts a few of its half pies from $5.00 to $2.00
and these half pies (try apple), when frozen and sliced thin on a hot day,
are even better than cookie dough ice cream! 8)

Cheesy calories

8) An easy "rule of thumb" about calories in cheese
(psychology to moderate cheese consumption):

4 tablespoons of cheese (about 200 calories)
equals 2 tablespoons of butter. :o

More cheese - more butter (calories)
