Sandy,
It is hard to maintain a healthy diet when life is in crisis. Hope he feels better soon and you get some much needed rest. And that your weather has cooled off to a tolerable temperature! We've had only two days of school in the past two weeks because of cold, ice and snow! Except for not being able to wear a loin cloth(lol), the weather hasn't been too much of an inconvenience(haven't lost power). We're pretty used to the cold this time of year, even got a jump on spring cleaning, organized the pantry. That's why were having Grandma Kingscott's Super Soup for dinner! Everything in the pantry healthy and wholesome(except I'm out of barley :o), and a ton of yummy veggies! Think I'll make gluten free corn bread too.

Gees, it's already 9:25 and Tiny hasn't asked to come over yet, better find out what's going on.

Hi Kim,
We heard about the polar vortex over here and saw photos of all the snow. I guess you all ate sitting right in the middle of where it stretches down out of Canada every year. In Ohio we were often on the fringes of such weather... and I remember it was not fun.

Actually I think I have become rather soft where heat is concerned. I mean 80's are manageable right and I think that is where we are sitting right now lol so don't pay any attention to my whining.

I think clearing out th food cabinets an getting rid of the unhealthy stuff would be the way to go...Then filling it with yummy healthy stuff. We're doing better but still sometimes crave fish and chips etc...

Yep definitely going to try some of these latest recipes...

Looks like a storm is brewing now better check the laundry. (hanging it outside)

Hot seedy bath ... :roll:

:idea: Soak raw pumpkin or sunflower seeds in hot, slightly salty water 5-10 min.
to make them more taste/texture complementary to hot dishes. ;)

Hot steamy eggs ... :roll

Cracked and steamed eggs + egg whites (e.g., double boiler) last much longer
when refrigerated; facilitate preparation of Super EZ Egg Salad! 8)

Cruciferous veggies ... :roll

Super convenient Broccoli Bowl ... :roll

Place a serving of canned (rinsed & drained) black beans in a deep bowl,
sprinkle on garlic granules, then layer with bite-size broccoli pieces,
red bell pepper, and top with chopped sweet onion. :roll

Cover with plastic wrap and refrigerate. To heat, remove plastic wrap,
cover, and microwave about 4 min. (for al dente). Steam from veggies
helps minimize time in the microwave. And the raw onion seems
to help the pre-cook Bowl last longer in the fridge. :o

:idea: Speaking of super convenient "Broccoli Bowl" ...

Try a super convenient Polenta Bowl:
(uses just-cooked steamed eggs)

In a medium saucepan, simmer 1 cup rinsed polenta (ground corn)
with 1 cup water, stirring frequently. When mixture is thick,
stir in 1/4 tsp garlic granules, 1/2 tsp salt, 1 tbsp virgin olive oil;
then fold in 1 1/2 cups each chopped sweet onion and asparagus
(both previously microwaved to al dente). ;)

:arrow: Place one cooked egg + whites in bottom of a bowl,
then top with a generous serving of Veggie Polenta.
Cover with plastic wrap, cool, then refrigerate.

To cook, remove plastic wrap, cover, microwave about 3 min.
Optional: Then sprinkle on salt & pepper; drizzle on olive oil. :roll
Very tasty served with cherry tomatoes!

Tip: Onion and asparagus provide inulin, a pre-biotic fiber. 8)

We saw a piece on our news speaking of the value of 500 mg of Vitamin C taken twice a day to help control blood sugars. The patients were seeing the benefits...but they warned the viewing public to not disregard their diabetes medicine just yet. :)

Pre-packaged ground turkey (usually a flat block)
can be baked like faux sausage: Preheat oven to 350F,
lightly coat both sides of turkey "patty" with olive oil,
generously sprinkle top of patty with garlic granules
and ground sage, then bake 45 min.

:idea: Tips: Separate patty into strips before baking.
Pour off moisture and "stuff" that collects in the pan
5 min. before removing turkey patty from oven.

Red Beans on Toast
(Brands are listed for reference)

:arrow: Mash 15oz can O Organics Red Kidney Beans, drained,
stir in 3 tbsp Newman's Classic Oil & Vinegar Dressing,
1 tbsp Bragg Raw Apple Cider Vinegar, 1/4 tsp salt,
1/2 tsp garlic granules, then 1 tbsp dried parsley.

Refrigerate for several hours, then stir before serving.
:roll Excellent on toasted Ezekiel 4:9 Whole Grain Bread!

Tips: Beans 'n wheat are protein complements. ;)
If desired, warm bean mixture before serving.

substitute 15oz can black beans with dried oregano instead of dried parsley.
...and both of these upgrade when topped with shredded cheese! :roll

These mixtures make good filling for pita bread and tacos. ;)

Silly Stew

There's Soup, there's Stew, and there's Silly Stew ...
in relation to the liquid's thickening viscosity: ;)

:idea: Long story short, try this impromptu Silly Stew:

In a stew pot, simmer bite-size pieces of a medium butternut squash,
in 2 cups water, topped with 2 cups chopped yellow onion, topped with
2 cups chopped asparagus (if desired, add onion later, then asparagus
after that to create all al dente veggies). ;)

While veggies are simmering (about 45 min.), stir 1 tbsp whole husk psyllium
into 2 cups warm water (or preferred broth). :roll

Before veggies are completely cooked, stir in 1 tsp salt, 1 tsp garlic granules,
2 tsp Summer Savory, 1/2 tsp coarse black pepper, 1 1/2 tbsp dried parsley,
and 2 tbsp virgin olive oil, then psyllium ("silly") mixture.

Optional: Add cooked chicken or turkey, then heat to simmering.

Being sufficiently hydrated also helps brain function... I meant hydrated with WATER, no matter how you try to sell it, merlot is not water.

Being one who often made a 6-pack last all year (only alcohol consumed)
a retirement 5oz Sipper of merlot is considered late compensation. :roll

This decade, I discovered that it's easy to be dehydrated without alcohol
(my oral diabetes medicine seems to cancel thirst sensation ... :(
and before medicine I was thirstier than a post-desert camel).

I visited an 80-year-old woman in Finland five years ago who reminded me of this song
since "she never drank water - she always drank wine" (so it seemed, white wine). :?

Somehow she always stayed hydrated, spoke five European languages, had a doctorate,
chemistry degree, etc., and rowed me in a rowboat around the lake near her cabin. :roll:

:bana: She liked to skinny dip in the cold water (after sauna) and encouraged me.
I was very timid about entering the cold water and started backing down the ladder
when it broke off the pier, landing on top of me in the chilly water (but no injury).

... I learned to like white wine at that cabin. :D

However ... black chia seeds better color coordinate with thawed wild blueberries (about 1 tbsp to 1 cup). Stir the chia seeds into the container of thawed blueberries and refrigerate overnight for the seeds to absorb moisture, then stir before serving. :roll

:scratch: Why mix chia seeds with wild blueberries? Dunno! Didn't the Aztec long distance runners run all day (in their loincloths, serpent sandals, and Nykee headbands) on a handful of chia seeds and with occasional wild blueberry pickin'? :roll:

When any protein is consumed (meat, fish, etc.), digestion always breaks down the protein into amino acids
... which are then reassembled by the body into its currently desired protein molecules. 8)

When healthy, the human body is an efficient eliminator of unneccesary supplements ...
as sometimes evidenced by dark yelllow pee hours after taking certain vitamins. ;)
