Whisk 1 cup plain kefir, 2/3 cup Tiger Nut Flour,
and 1/2 tsp organic vanilla; refrigerate. 8)

To preserve a cut avocado longer (hours not days),
cut one in half, sprinkle nut side lightly with sugar,
wrap in plastic wrap and refrigerate. 8)

To cut an avocado in half, cut vertically with knife cutting in a circle
around avocado but not into the nut. Twist halves in opposite direction
(nut remains in one half). Use spoon to scoup out flesh. ;)

Cornmeal Mush Al Dente

Polenta (coarsely ground corn) is normally simmered 1 cup polenta to 4 cups water.
This diabetes-friendly* method reduces water to 3 cups and starts with cold water.

* Slightly-chewy, coarse grains digest slower for better blood sugar control. 8)

:roll Ingredients:

1 cup polenta
3 cups water
1/2 tsp salt
1 cup diced onion
3 tbsp dried parsley
2 tbsp olive oil (or butter)

:arrow: Directions:

in a medium saucepan, rinse polenta (carefully pour off water),
then add 3 cups water and bring to a soft boil.

Reduce heat and simmer 20 min, stirring frequently.

Stir in diced onion and remaining ingredients, simmer 10 min.,
then remove pan from heat, stir, cover and let cool.

:idea: Tip: Serve topped with shredded cheddar cheese,
hard-boiled egg, and cherry tomatoes for breakfast. ;)

New theory: Type 2 Diabetes is not a disease but the body's response
to many years of an excess of quickly digesting carbohydrates ...
and limited good stuff (e.g., fresh produce, exercise). :o

The body responds with increasing insulin resistance, etc.,
until Type 2 is finally diagnosed (disease is present). :(

Rationale why a diabetic can eat prunes, sugar-concentrated dried fruit:
If you would not eat two plums, why would you eat three prunes? ;)

:idea: And consider a Prune Antioxidant Snack Pack (ASP):
Coat moist dried prunes (about 2 cups) with 100% cacao powder
and refrigerate with raw walnut halves. Finger-lickin' yum! :roll

... but not gourmet snackin' unless you include
dark-chocolate-covered banana chips. 8)

I'm currently focused on pre-packaged elderberry extract syrup
from a health food store and without sweetener, preservative
(just vegetable glycerin and deionized water). ;)

A post-nap blood sugar of 68 (3.8 ) is quite surprising ...
following a pre-nap lunch of lentil stew, slice of provolone,
and 5oz Sipper of merlot with 1 tsp elderberry syrup
(third day of one afternoon Sipper). :roll

Obviously, more testing/napping required. :roll:

:roll Ingredients:

17.5oz pkg Betty Crocker Oatmeal Cookie Mix
1 cup Bob's Red Mill Gluten Free Baking Flour

1 jumbo egg + 1/3 cup egg whites
1/3 cup half & half + 1/4 cup water
1/3 cup light olive oil

1 cup raw sunflower seeds

:arrow: Directions:

Pre-heat oven to 375F degrees; lightly oil 8" x 10" baking dish.

Stir together dry ingredients, whisk together liquid ingredients
and pour into dry mixture, then stir vigorously.

Fold in sunflower seeds and pour evenly into baking dish
(sprinkle more sunflower seeds on top if desired). :roll

Reduce oven to 350F degrees and bake 45 min.

Winter Sunflower Cake (better recipe)

Who knew :?: :!: This can be a breakfast cake!
Serve with butter and creamed corn. :o

:roll Ingredients:

17.5oz pkg Betty Crocker Oatmeal Cookie Mix
1/2 cup polenta (coarsely ground corn)
1 cup water
1 jumbo egg
1/3 cup egg whites
1/3 cup half & half
1/4 cup light olive oil
1 1/3 cups raw sunflower seeds

:arrow: Directions:

Pre-heat oven to 375F degrees; lightly oil 8" x 10" baking dish.

In a small bowl, whisk egg, egg whites, half & half, and olive oil.

In a medium saucepan, rinse polenta, drain, add 1 cup water.
Bring to a soft boil and simmer until water is absorbed
(about 10 min. - polenta is not completely cooked). ;)

Pour egg mixture into warm polenta, stir in cookie mix,
then fold in sunflower seeds.

Spoon batter into baking dish, reduce oven to 350F degrees;
bake about 55 min. Sing "Ahi Viene El Sol" while waiting:

Kim,

My plan was to find a cake-like recipe that would make use of sunflower seeds.
The Cookie Mix was a convenient starter - the other ingredients "followed". :roll:
As a diabetic, the less flour(s) was important (why polenta was tried next),
but the "Ahi Viene El Sol" concept hints that many versions will be good :!:

:idea: Perhaps a traditional remembrance of the Beatles ...

For example, instead of restaurant staff singing "Happy Birthday"
to a guest while presenting a candle-lighted cake, they would present
a Sunflower Cake and sing "Ahi Viene El Sol", a ceremony meant
to uplift the spirits of the honored guest. :roll

Note: "Here Comes the Sun" is the true title, but "Ahi Viene ..."
seems to elevate the song to a higher level. ;)

I prefer the polenta version, but the cookie mix was too sweet.
