Who knew? #1
Tiger Nut Paleo Pudding (as a base) is best as:
Whisk 1 cup plain kefir, 2/3 cup Tiger Nut Flour,
and 1/2 tsp organic vanilla; refrigerate.
Who knew? #2a
To preserve a cut avocado longer (hours not days),
cut one in half, sprinkle nut side lightly with sugar,
wrap in plastic wrap and refrigerate.
Who knew? #2b
To cut an avocado in half, cut vertically with knife cutting in a circle
around avocado but not into the nut. Twist halves in opposite direction
(nut remains in one half). Use spoon to scoup out flesh.

Actually, Gritty Nutty Noggin is Perfect Paleo Pudding,
substituting eggnog for plain kefir and no added spices;
half of each is also tasty (and healthier).

Cornmeal Mush Al Dente
Cornmeal Mush Al Dente
Polenta (coarsely ground corn) is normally simmered 1 cup polenta to 4 cups water.
This diabetes-friendly* method reduces water to 3 cups and starts with cold water.

Ingredients:
1 cup polenta
3 cups water
1/2 tsp salt
1 cup diced onion
3 tbsp dried parsley
2 tbsp olive oil (or butter)
Directions:
in a medium saucepan, rinse polenta (carefully pour off water),
then add 3 cups water and bring to a soft boil.
Reduce heat and simmer 20 min, stirring frequently.
Stir in diced onion and remaining ingredients, simmer 10 min.,
then remove pan from heat, stir, cover and let cool.
Tip: Serve topped with shredded cheddar cheese,
hard-boiled egg, and cherry tomatoes for breakfast.

Accidental pursuit of The Naughty Nog & Nog's Grog ...
Re: https://www.dictionary.com/e/eggnog/
"One theory is that nog derives from the word noggin, which was a Middle English word for a type of mug for serving alcohol. The Online Etymology Dictionary says nog means 'strong ale.' Drinking more than a "small cup" of eggnog with a "small amount of alcohol"

Based on the simplicity of Three Kings Brandy Eggnog*,
themanual's "How to Make Eggnog" might also be simplified:
6 large eggs
8 cups whole milk
1 cup heavy whipping cream
1/2 cup white granulated sugar
1/4 tsp salt
1 tbsp vanilla extract
1 tsp nutmeg
1 tsp ground cinnamon
1/3 cup cognac
* recipe in "From a Monastery Kitchen", p. 157
Tips: Buy a hearty bottle of cognac since this recipe redo
will require experimentation (let family and friends help);
increase cognac as desired but limited by discretion.

These small glasses seem ideal for a serving of eggnog!
Get a large set! Although a measuring cup (glass),
they suggest casual business - not frivolous drinking.

Re: https://www.healthline.com/health/food- ... how-to-use
"a 2015 study showed that maitake mushroom can have a positive effect on rats with type 2 diabetes.
During the study, maitake mushroom consumption had a positive effect on glucose levels of rats.
This points to the mushroom’s potential to treat Type 2 diabetes in humans."
So, if you're Type 2 and often in a rat race, stay in the mazes,
but consult your doctor first (also about your fellow rats).
The maitake secret may be adaptogenic beta glucans,
also found in oats and barley.

New theory: Type 2 Diabetes is not a disease but the body's response

Re: https://www.usatoday.com/story/news/hea ... 472786002/
"Ketogenic diets are low on carbs and high on fat, which puts the body in a state of ketosis,
a metabolic state that happens when your body doesn’t have enough carbohydrates
for your cells to burn for energy. So, instead, it burns fat." (your own and fat you eat)
"Basically, with this (Paleo) diet you’re looking at meals that could either be hunted or gathered —
lean meats, fish, vegetables, nuts and seeds" (hunting/gathering in grocery stores permitted)
"The Alkaline diet approves of most fruits and vegetables, nuts, legumes, soybeans and tofu.
These are foods that are alkaline" (the animal friendly diet)
"Whole30 encourages people to eat foods with as few ingredients as possible, and all those ingredients
should be substances you know and can pronounce. A head of broccoli? Go for it." (3 syllables)
"Think of the Flexitarian diet as vegetarian with a lot of cheat days." (food cheatin')
"An extraordinarily dramatized version of his (Lectin-free) theory is that plants are waging war
against us so we don’t eat them and we’re too dumb to adjust our diets." ("Feed me Seymore")
The Mediterranean diet "encourages a glass of red wine every now and then."
(probably not true: "now" = afternoon, "then" = evening)
Then there's Dumpster Diving, Eat What You Want, Go to Mom's House,
Dollar Store, and the Fast Life (don't eat) diets.
Re: https://www.dailymail.co.uk/femail/arti ... weeks.html
Fast 800 5/2 - A new one with a concept flaw:
Number of calories (e.g. 800) should be tailored to the dieter (a dietician could calculate
this number, based on important variables ... whatever they are).
Finally, calories consumed relate directly to the types/portions of food;
the Serving Size Diet is still waiting for popularity (a diet similar to this:

A diabetes discovery journey (prunes) ...
Who knew?! A prune is a dried plum.
Rationale why a diabetic can eat prunes, sugar-concentrated dried fruit:
If you would not eat two plums, why would you eat three prunes?
And consider a Prune Antioxidant Snack Pack (ASP):
Coat moist dried prunes (about 2 cups) with 100% cacao powder
and refrigerate with raw walnut halves. Finger-lickin' yum!
... but not gourmet snackin' unless you include
dark-chocolate-covered banana chips.
Greeting when welcoming dinner guests:

Re: UB Cookin'
Hi, Amigo!
Winter Sunflower Cake sounds intriguing. Believe the first recipe would be more to my liking. Do you suppose I could substitute my own oatmeal cookie recipe, replacing half the sugar with stevia, and achieve about the same results?
Lol! Listening to "Ahi Viene El Sol" while waiting, would definitely enhance the experience!
Thanks for the recipe,
Kim
Winter Sunflower Cake sounds intriguing. Believe the first recipe would be more to my liking. Do you suppose I could substitute my own oatmeal cookie recipe, replacing half the sugar with stevia, and achieve about the same results?
Lol! Listening to "Ahi Viene El Sol" while waiting, would definitely enhance the experience!
Thanks for the recipe,
Kim

Re: UB Cookin'
Kim,
My plan was to find a cake-like recipe that would make use of sunflower seeds.
The Cookie Mix was a convenient starter - the other ingredients "followed".
As a diabetic, the less flour(s) was important (why polenta was tried next),
but the "Ahi Viene El Sol" concept hints that many versions will be good
Perhaps a traditional remembrance of the Beatles ...
For example, instead of restaurant staff singing "Happy Birthday"
to a guest while presenting a candle-lighted cake, they would present
a Sunflower Cake and sing "Ahi Viene El Sol", a ceremony meant
to uplift the spirits of the honored guest.
Note: "Here Comes the Sun" is the true title, but "Ahi Viene ..."
seems to elevate the song to a higher level.

Both versions of the Sunflower cake sound good...(I put both in the index. I think I'm going to try the polenta version as G needs all the help he can get managing his blood sugar. Thanks Rod!

Re: UB Cookin'
Sandy,
I prefer the polenta version, but the cookie mix was too sweet.
Still, the recipe is a good starting point for the concept .
Better lyrics for "Ahi Viene El Sol" ...
Comes the sun now to you.
Comes the sun now to you.
Comes the sun now Cariño Mio.
Comes the sun now to you.
