Tasty complement to steamed mushrooms!

Tips: Cut into bite-size pieces before steaming.
Try steaming along with baby bellas. :D

:roll Ingredients:

2 small eggplants (or 1 medium), bite-size pieces
3 cups baby bella mushrooms, bite-size pieces
med. bunch green onions, chopped
olive oil, garlic granules, S&P

:arrow: Directions:

In a double boiler, steam eggplant 5 min.
then layer on mushrooms, then green onions.
Steam until cooked as desired (try 5 min.).

To serve, drizzle on olive oil, then sprinkle spices.
Tasty, served with a boiled egg (or other protein). :roll

Tip: Leave eggplant skin on for best nutrition.

Chunky Whatsit Sauce :lol:

:roll Ingredients:

28oz can Crushed Roma Tomatoes
16oz jar Chunky Mild Salsa
1 tbsp apple cider vinegar
2 tbsp dried cilantro
1 tsp garlic granules
1 tbsp chili powder
1 tbsp paprika

:arrow: Directions:

Mix well and refrigerate overnight.

Serve hot, cold, or Goldilocks,
in, under, or over whatever. 8)

:bana: Also try Green Lentil Whatsit

Soak 1 cup green lentils in lotsa water several hours,
then pour off water, slightly cover with more water,
and simmer about 20 min. Immediately stir in
1 1/2 cups each chopped onions and celery
that have been microwaved to al dente;
then stir in Whatsit Sauce. :roll

Thanks Rod,

Your latest recipes are making me very hungry this morning... I do have an eggplant in the fridge...but sadly no mushrooms even though I was prompted to buy them at the store this week.. Obviously I didn't listen to my inner guidance. :roll: :(

:roll Super soothing for throat with good hydration:
Add a bag to 1 1/2 cup mug of simmering water
and include a good slice of raw ginger.

Tip: Scrub a chunk of fresh ginger in running water,
slice into rounds (no need to peel), then freeze.
Use a frozen slice as a lozenge or in hot tea
(remove slice just after tea is brewed).

:idea: Protection for the season when out 'n about:
Carry frozen slices in a ZipLoc Snack Bag -
they'll stay fresh enough for hours!

with equal portion of common Yellow Mustard,

Really red, for corn chips or whatever.

:roll Ingredients:

15oz can red kidney beans
10oz can tomato soup
1 tsp smoked paprika
3 tsp chili powder
2 tsp paprika
1 tsp garlic granules
2 tbsp dried cilantro
1 tbsp apple cider vinegar
1 tbsp virgin olive oil

:arrow: Directions:

Beat kidney beans (include juice)
and tomato soup, then stir in
remaining ingredients, oil last.

Refrigerate several hours,
then stir before serving.

Interesting recipe! Even to stuff a white fish (serve with fresh lemon wedges).

:idea: For those really fond of Brussels sprouts, just cut in half and steam as desired,
then drizzle on olive oil and sprinkle with S&P (even garlic powder). :roll

Tip: Refrigerate cooked Brussels and snack on cold! (even with a dip) 8)

Oh, Bossie! (one big Cao Plop,
aka "OB Cacao Muffin Top Wannabe")
Try with 5oz pkg dried cranberries. :D

:roll Ingredients:

1 1/3 cups light oat bran
1/3 cup 100% cacao powder
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
3 tbsp brown sugar
1/2 cup half & half
1/2 cup applesauce
1/3 cup egg whites
2 tbsp light olive oil

:arrow: Directions:

Preheat oven to 400F degrees;
place parchment paper on baking sheet.

Combine ingredients in order listed,
stirring well before adding olive oil,
then well again.

Pour batter onto baking sheet,
shake this sheet to create circle, :roll:
reduce oven to 375F, bake 35 min.

:idea: Serve as pizza wedges, brownie squares,
pie crust edges or "wings and prayers". :finger:

Then there's Apple Cao Sauce:
Combine 1 1/2 cups natural apple sauce
with 1/4 cup 100% cacao powder for snackin'
(or to accompany a dry Plop)

:bana: For the holidays, there's Cao Plop Pudding:

Fold 5oz pkg dried sweetened cranberries
into the Oh, Bossie! batter, bake, then chill.

Then prepare Apple Cao Sauce and
crumble in baked Bossie (mini pieces).

Plop dollop on top of saucy plops.
Try Drambuie Liqueur on the side
(or Cointreau or Grand Marnier). :D

Easy Pumpkin Peasy (proof of concept,
steamed in large soup pot)

:roll Ingredients:

15oz can pumpkin puree
1/4 cup light oat bran
3/4 tsp garlic granules
3/4 tsp salt
2 tbsp virgin olive oil
1 large sweet onion, chopped
12oz pkg frozen petite peas, thawed
2 tbsp dried parsley, divided

:arrow: Directions:

Lightly oil 2 quart baking dish.
Thaw frozen peas in hot water then drain.
Microwave chopped onion to al dente.

Mix ingredients in order listed
(save half of parsley for topping).

Spoon mixture into baking dish,
sprinkle saved parsley on top,
steam 45 min. in covered pan
(without lid on baking dish).

Try drizzled with olive oil,
then sprinkled with smoked paprika,
and fresh ground black pepper.

12oz can tomato soup
1 tsp garlic granules
2 tbsp dried cilantro
2 tsp paprika

Redd Quili (Quinoa Chili)
(mix with Redd Bean Dip)

:roll Ingredients:

1 cup multi-color quinoa
1 2/3 cups water
1 tsp garlic granules
3/4 tsp salt
1 tbsp virgin olive oil
large sweet onion, diced

:arrow: Directions:

Simmer rinsed quinoa in water
until most of water is absorbed,
then stir in spices and olive oil,
then onion (even cooked meat).

While quinoa is cooking, microwave
onion to al dente.


Redd Bean Dip

:roll Ingredients:

Chocolate Chia Pudding

Good for any meal, especially breakfast!
Serve with milk, half & half, or a dollop
... and/or chopped walnuts!

:roll Ingredients:

2 1/2 cups hot water
1/2 cup light oat bran
1/4 cup black chia seeds
1/3 cup 100% cacao powder
1 tsp cinnamon
2 tbsp sugar
1/4 tsp salt
1/3 cup egg whites

:arrow: Directions:

Lightly oil 1 quart baking dish.
Heat 1" water in large soup pot.

In a large mixing bowl,
whisk ingredients in the order listed,
(rest 5 min. before adding egg whites).

Pour into baking dish, place dish
on steaming rack in soup pot,
cover pot, and steam 35 min.

:bana: Or experience cacaophony during the holidays!
Serve Oh, Bossie!* with pieces of 92% Cacao Bar
and a chocolate liqueur or cuppa hot chocolate.

Noticing the 2x2 list of ingredients (adapted to modern quantities),
I asked why not two cans of red beans? :?

Mixed Veggie Casserole

EZ comfort food for any meal.
Top with sauce, cheese, or just S&P.
A Mac & Cheese substitute,
nutritionally speaking. ;)

:roll Ingredients:

14oz pkg frozen mixed vegetables
2 xlg eggs, beaten
1/4 cup egg whites
1/3 cup water or milk
1/2 tsp garlic granules
1 tbsp virgin olive oil
3/4 tp salt
1/2 cup light oat bran
2 tbsp dried parsley
1 large sweet onion, chopped

:arrow: Directions:

Lightly oil 1 quart baking dish;
pre-heat oven to 325F degrees.

Thaw frozen veggies in hot water, then drain.

Whisk eggs, water, garlic granules, oil, and salt,
then mix into thawed veggies. Gently mix in
oat bran and parsley, then fold in onion.

Spoon into baking dish, cover
and bake 1 hr 25 min.

Cacao Flatbread

More "bread" than "dessert"
and tastier than a dog biscuit! :tongue:

:roll Ingredients:

1 1/3 cups light oat bran
1/3 cup 100% cacao powder
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 cup half & half
1/2 cup applesauce
2 tbsp brown sugar
1/3 cup egg whites
1 tbsp light olive oil
3/4 cup diced almonds
(or raw sunflower seeds)

:arrow: Directions:

Preheat oven to 400F degrees;
place parchment paper on baking sheet.

Combine ingredients in order listed,
stirring well before adding olive oil,
well again, then fold in seeds
(briefly rinsed in hot water).

Spoon batter onto baking sheet,
reduce oven to 375F, bake 35 min.

8) For Hearty Dice & Slice Flatbread,
spoon mixture onto parchment, cover with parchment,
and press with large cutting board, using 4 dice
as separators. Remove top parchment to bake
(bake a bit longer for crispy flatbread).

when all through the house
not a creature was stirring, but ...
trashing (3 minimally eatened Cao Plop recipes),
mashing (squares and rounds into tiny pieces),
and bashing (verbally, the whole time). :duh

Having just settled 2 med. bread loaf pans
into a 350F pre-heated oven (with pans
lookin' like well-mounded meatloaves?)
the rest of the Cao Tale ...

:roll Added to this Plop batter:
1/3 cup light oat bran
1/4 cup 100% cacao powder
2 tsp cinnamon
3/4 tsp salt
2 cups warm water
1/2 cup half & half
1/4 cup brown sugar
1/3 cup egg whites,
2 xlg eggs, whisked,
2 tbsp virgin olive oil
9oz pkg dried cranberries, soaked

... and a partridge in a pear tree
(if this recipe also gets a 1-Woof rating) :(


:arrow: The rest of the rest of the story ...

Bake this 1 hr 20 min., then slice into fat sections,
place on parchment paper on a cookie sheet
and continue baking. How long? 35 min?
I might have to ask the partridge. :?

Why :?: Because loaf is too dense and moist
(but they might bake properly in the pans
at lower temperature ... for a day or two) :lol:

Continued baking for 50 min. achieved a 2-Woof rating ...
plus swishy tail when consumed with pieces of 92% cacao bar
(and generous gulps of caffeinated joe). :roll

Hi Rod,

I wanted you to know that I made Noah's bean dip last week end. I did cheat and only used 1 teaspoon of garlic granules, though. I was almost out and it seemed plenty garlicky to me. This recipe is also good with sour cream. :mrgreen:
