Interestingly, my doctor was expressing interest in the Keto diet (for himself) during my office visit. Later, when the CT scan lab directed me to not take diabetes medicine for 48 hours after the CT, I sensed opportunity to test Keto foods (else blood sugar scores would have been higher for those days). Long story short: Blood sugar scores suddenly became very good! and without medication!

Daily testing continues with detailed note taking all day. :duh

Ending day 6 of strict Keto with continuing great blood sugars! (pre-supper was 82 (4.6))
... and not such emphasis on the high fat portion of a Keto diet. I'm somewhat mystified
that my early decision to eliminate ALL grain-based foods seems to be so important!
At least, without grains (including flours), carb limiting seems much easier - I'm keeping
total carbs under 50g and learned that sugar in fruit requires close monitoring. :oops:

:idea: I believe that whole grains could be included in a relaxed Keto diet (<100g carbs),
but it's easier to first identify foods that can be consumed (and are appealing). ;)

About grain-based foods (IMO): These often contain more carbohydrates and the carbs
digest faster than other foods. Grain-based foods had been the greater part of my diet
until Keto Kommander started navigating my grocery store cruisin'. :roll:

:roll Tip: Firm tofu made with sprouted soybeans, briefly heated and served with
cooked frozen mixed veggies, then topped with virgin olive oil and S&P
has satisfying carb-appeal ... without having so many carbs. 8)

Sandy,

If my glucometer was not showing cause & effect from foods,
I would not believe that eliminating grains (at least, temporarily)
would be an easy transition to a Keto diet. Lower-than-average
scores (lower than scores of healthy people) are mysterious. :?

I'm not convinced that current Keto information is perfect
(beans are discouraged, but I've found that 1/2 cup of black beans
or red kidney beans, or aduki beans, or garbanzo beans
does not cause a large blood sugar increase.) :roll

Caveat: The goal of a strict Keto diet is to cause constant ketosis
where the body gets energy from fats more than carbohydrates*.
Having read that ketosis occurs naturally (albeit low levels),
forcing constant ketosis seems incorrect. :roll:

* This is why the Keto diet emphasizes fats.

Caution: Diabetes is not cured by Keto dieting -
it just beomes better-controlled ... apparently. ;)

Quick answer :arrow:
Many fresh veggies (even cooked) are recommended for the Keto diet,
with root veggies (carrots, potatoes) consumed in limited amount.
My recent good experience with beans hints that root veggies
may not be so problematic in small servings. :finger:

Since I needed to fast 8-12 hours for this morning's doctor's appointment,
I surmised that a later hearty supper (8:00 PM; still "Keto") yesterday
would provide the energy I needed until I returned home.

My supper was more caloric than usual and included 1/3 cup Cilantro Pesto*
followed later by 1/2 LARGE mango, followed by a bedtime "snack" of
1 cup homemade mushroom soup and 1 oz cheddar cheese. :roll:
:o Runaway dieting, but still mostly Keto!

I expected a higher morning blood sugar but it was still in good range
for people without diabetes: 70-100 mg/dL (3.9-5.6 mmol). 8)
My score: 96 (5.3) ... without diabetes medication :!:
Obviously, the good influence of "Keto" foods.

Wheat 'n Rye Mounds

Wheat 'n Rye Mounds (makes 9 Mounds)

A more fiber-inclusive version of the Mini-Mounds of Ruis recipe,
with similar ease of preparation. These hearty Rye Mounds are
great accompanied by complementary spreads or cheese.

:roll Ingredients:

2 1/3 cups very warm water
1 1/2 tsp dry yeast
2 rounded tsp brown sugar
1 cup wheat bran

3/4 tsp salt
1/2 tsp dry yeast
1 rounded tbsp caraway seeds
2 1/2 cups dark rye flour
1/4 rounded cup brown flax meal
1 tbsp virgin olive oil
Bread flour for cookie sheet

:arrow: Directions:

- Lightly coat a cookie sheet with oil, then sprinkle on bread flour and tap to remove excess.
- Pre-heat oven to 375 degrees.
- In a warm glass quart measuring cup, add warm water, then stir in yeast, sugar, and wheat bran;
cover measuring cup and let mixture rest 20 min.
- In a medium bowl, combine rye flour and flax meal, then set aside.
- Stir salt, yeast, and caraway seeds into soaked bran, stir well, then pour into flour mixture;
stir well to combine, add olive oil and stir vigorously to mix.
- Drop spoonsful of batter evenly onto floured cookie sheet, then let rest in a warm place 5 min.
- Reduce oven to 350 degrees and bake 40-45 min.
- Let Mounds cool 5 min., then separate from cookie sheet with a spatula and serve warm.

Tips:
1) warm the measuring cup and water in a microwave.
2) use two spoonsful per Mound (one on top) for height.

Wheat 'n Rye Mounds, a "perfected" rye muffin top recipe. :roll
On the other hand ... not so Keto friendly:

Carbohydrates in foods of meal after 14 hr fast (2 hr after doctor's appt):

1 Rye Mound (28g), 1/3 cup cottage cheese (2.5g), 2 small tomatoes (.5g)
Blood sugar before meal: 82 (after 14 hr fast)
2 hrs later: 122 (first time over 100 in 7 days of Keto foods!)

:shock: Good evidence that the recipe's wheat bran (1 cup; 10g per 1/4 cup)
and rye flour (2 1/2 cups; 21g per 1/4 cup) trigger higher blood sugar.

With 50g the daily Keto goal, 28g is not that high, but these grains
triggered quick blood sugar response and much higher (IMO)
than similar response to fat and protein. ;)

Another coinkydink ...

I was instructed by the doctor's office to fast 8-12 hrs before my appoinment today
... and assumed that blood would be drawn for lab tests. :duh

My doctor just reviewed my CT scan results, declaring that no major problem existed
in the area scanned and that I needed a seasonal flu shot - no blood testing required.

The coinkydink: I would not have seized the opportunity for the Keto test
if such a long fast was not required. Perhaps, guidance from above
to continue the Keto research re: diabetes. :roll:

Maybe ... in the future, diabetics with low blood sugar
will be instructed to "Eat a doughnut!" :o

Hi Rod and Sandy,

You guys are getting me hooked,,,lol

I'm adding recipies to my computer recipie file,,,thinking,,,ok,,,that's for my shopping list when we get down to AZ.

I'm definitely going to try your cilantro recipie with chick peas,,,reminds me of a humus recipie I 'had" and I like to eat it with Naan bread.

and the rye/wheat breads sound good with homemade soup for chilly winter days coming up.

but I never heard of sprouting brown rice,,,,

cooked, yes,,,in fact, had it tonight with my veggie/beef stir fry

and,,,thanks so much for that link to the Oldways Whole Grains Council.....super!!!

Glad to hear your scans came out good,,,,I would say a higher power just might have had a finger in the pie,
but if your scan hadn't been good, you just might have been giving up more blood samples!!

Fresh Cilantro Pesto

Fresh Cilantro Pesto

Not traditional pesto, but a tasty and nutritious mixture
that can be consumed like pesto or as a small-serving side dish.

Fill 5-cup food processor bowl with 4 cups sorted and rinsed fresh cilantro,
using leaves and thin stems but discarding thicker stems (cilantro compacts
easily as other ingredients are added).

Sprinkle on 1/3 cup hulled sesame seeds, add 3-4 cloves sliced fresh garlic,
then drizzle on 1/3 cup virgin olive oil, followed by 1/3 cup fresh lemon juice.
Spread on two 15oz cans rinsed garbanzo beans, then add 1/2 cup cold water.

Process mixture to desired consistency (try 1-2 min.).

Using a spatula, scoup pesto into small glass bowls for freezing
(or chilled serving bowls, if using immediately). Mixture freezes well
and has good quality when thawed; for best quality, prepare same day
that cilantro is purchased (select freshest cilantro possible). ;)

:idea: Fresh cilantro and beans (pectin) are sometimes suggested
by nutritionists for heavy metals detoxification.

This "recipe" is a brief summary of what was required for me
to stop taking 2000mg daily oral diabetes medicine and
have good blood sugars (for non-diabetics!) for a week.

Testing was almost a strict Keto diet (<50g carbohydrates)
but only two meals daily plus two snacks with fewer calories
than necessary to maintain weight (trying to lose weight).
Since my weight is slowly decreasing, the total calories
were not that restricted! ;)

Quinoa, usually sold as a grain but is a seed, is diabetes friendly! :roll
with slower digesting carbohydrates and a good rice substitute:

Add 1 cup rinsed quinoa to a med. sauce pan, pour on 1 2/3 cups water,
spread on 1 large chopped onion and 2 med. chopped yellow squash;
simmer 12 min., remove pan from heat and keep covered 10 min.
Stir briefly, then try with virgin olive oil, salt & pepper;
nice with shredded cheese or cubes. ;)

:idea: Tip: Increase water to 1 3/4 cups, skip yellow squash,
and this mixture is ideal for spaghetti or other sauces! 8)
Serving size: 1/4 cup dry quinoa

Oops! So many variables to consider! :duh
This morning's 1 tbsp psyllium (more fiber for a grain-free diet) contributes

My pre-breakfast blood sugar: 108 (6.0);
2 hrs after quinoa lunch (with 1/3 cup yogurt): 97 (5.4)
... and still no diabetes medicine!

Hi Rod and PP,

Just wanted you to know that I tried your Cannelloni bean/cilantro pesto last night, Rod. (That is if cilantro is the same thing as coriander...couldn't find cilantro but this sure looked the same.) I enjoyed it, but since I am on a low carb diet, I didn't use it on Naan bread although that sounds yummy, PP... and I am making a note of that for next winter. Instead I spread it on some celery and this morning on some sliced cucumbers. It gave me the needed "snack fix" last night when I was watching a movie. :sunflower:

I keep relaying to George your discoveries hoping that one of these days he will want to put what you've discovered into practice. :finger:

A health store employee (with nutrition expertise) told me today that the Keto Diet is just the later name for the Atkins Diet:

However, as I understand, the Keto Diet is a maintenance diet for better health (and better blood sugar control) - not just a diet to lose weight. And my recent experience tells me that both the Atkins and Keto diets are unneccessarily complicated (see my Keto Carbonary summary). I'm not finding that higher carb foods (other than grains and sugars) are such a problem since they don't seem to cause a similar quick blood sugar response. Of course, the carbs of these "better" foods still have to be limited to reasonable serving sizes.

Also, both the Atkins and Keto Diets emphasize more daily fat, but I've not had to consume so much fat (a necessity for true ketosis ... apparently). How my blood sugars are staying in good range (even for a non-diabetic) is still a mystery since I'm not following either diet according to its promotion. One variable is consistent: no grain-based carbohydrates (specifically, the wheat, spelt, rye, barley, and rice of the Atkins' No-Nos; I include oats since these plants grow similarly to the others). But I am trying to keep daily carbs closer to the 50g limit of the Keto Diet, probably averaging 60-70g daily; my two-meals daily habit makes it easier to control total carbs.

I'm already rationalizing that any deprivation on food limiting (or avoiding) is well worth the better health obtained with good blood sugar control ... without medication! ;)

... even for a non-diabetic! 8)

Hopefully, this no-grains runaway snackin' will not be repeated :finger:
since I threw caution to the wind and rationalized the "testing".

Hello you two,

I guess you could say I am on the induction phase of the Adkins diet. (Been on it about 5 days now. Thanks Rod for putting up that URL as I found it very helpful in helping me to remember the basic facts of this diet. ( I did it years ago and lost weight in no time flat and in places I had a hard time in seeing any effect with other diets. )I can see I need to buy some more vegetables as I have been mostly existing on mesculum(sp.?) salad and "some" meat. I have been "dead tired". So I think I need to boost my caloric intake with some low carb varieties and maybe a bit more fat.

I found this page when looking for a chart to give me some idea of the carb content of vegetables.
