:idea: Place cut avocados in unused produce bag, feed bag thru masher end
and place in a tall container of chilled water, forcing air out of the bag
(masher* keeps avocados at bottom with open end out of water).

Brownie Cacaophony

Seriously chocolate, dense cake with "brownies" attitude. :roll:

:roll Ingredients:

1 rounded cup light oat bran
1/2 cup 100% cacao powder
1/2 cup shredded coconut
1 1/2 tsp baking powder
1 tsp cinnamon
3/4 tsp salt

1 1/2 cups natural applesauce
1/3 cup brown sugar, packed
1/2 cup half & half
2 xlg eggs
1/3 cup egg whites
2 tbsp virgin olive oil

Topping:
2/3 cup virgin coconut oil, warmed
1 1/3 cups 100% cacao powder
1 1/3 cups sunflower seeds

:arrow: Directions:

Lightly oil 8" x 10" baking dish;
pre-heat oven to 375F degrees.

In a large mixing bowl, combine dry ingredients
then stir in remaining ingredients as listed,
then vigorously stir to complete.

Pour batter into baking dish,
reduce oven to 350F, bake 55 min.

:arrow: To prepare topping ...
Combine coconut oil and cacao powder.
Pour over hot brownies when baked,
then sprinkle on sunflower seeds.
Return brownies to oven, turn off oven
and let brownies remain 30 min.

Cannellini Kustard

Creates a dip, spread, sauce base, or culinary kustard ...
or add your favorite mustard for a very garlicky mustard sauce
(reduces smoker's breath and chases away unwanted romance). :roll:

:roll Ingredients:

1 cup peeled garlic cloves
1 cup virgin olive oil
15oz can cannellini beans, drained
2 tbsp dried parsley
1 tsp salt

:arrow: Directions:

In a heat-proof bowl, steam garlic and olive oil 20 min.,
then whip together with remaining ingredients.

Refrigerate overnight, then use as desired ...
especially as a base for culinary creativity. 8)

Tip: To peel garlic, soak first in hot water 5 min.;
peel by hand with small knife and fingernail pinches.

Chocolate Voilà
Fast 'n easy hot breakfast dish! :D

:roll The CV mixture:
1 cup light oat bran
1/3 cup dried shredded coconut
1/4 cup 100% cacao powder

:arrow: One serving:
Heat 2/3 cup water just until simmering,
stir in 1/4 cup CV, 2 tbsp sunflower seeds,
1 tsp brown sugar, 2 tsp virgin coconut oil.
Cover, let stand 7-10 min., stir briefly.

:cheers: Voilà! Breakfast is ready :!:
Serve with slices of fresh orange to upscale
(and a cherry on top for special occasion). ;)

(water prevents air from seeping thru plastic):

:arrow: Spoon avocado into bowl, cover with plastic wrap
and press flat against entire surface of avocado.

Pour 1/2" water into plastic wrap to create pool,
cover bowl with lid or more plastic wrap,
then refrigerate. 8)

Repeat with new plastic wrap immediately
after removing desired portion for serving.

For the days when you need culinary balance,
try this bitter-not-sweet, slightly salty snack
(best paired with a tasty contrast). :roll:

:arrow: Place plastic wrap on a small tray.

Combine 2/3 cup virgin coconut oil (melted),
1 1/4 cups 100% cacao powder, 1/8 tsp salt;
stir in 1 1/4 cups sunflower seeds (warmed).

Pour evenly onto tray, then tilt tray slightly
to distribute mixture; cover with plastic wrap.
Refrigerate overnight, then break into pieces.

:idea: Tip: Tape edges of plastic wrap to tray
to keep wrap from folding into mixture.

3 tbsp stone ground mustard
1 cup shredded Swiss cheese
2/3 cup diced green onions
1/2 cup sunflower seeds
1/4 tsp garlic granules
3 tbsp dried parsley

Mix 'n refrigerate overnight.
Serve on whatever or nuthin'.
Add more kefir if too dry
and/or adjust as desired. ;)

Also try the sweeter Beet Yogurt:

:arrow: Combine 16oz container plain Greek Yogurt
with 2 1/2 tbsp red beet powder and 1/2 cup plain kefir.
To upscale to Yogurt, Red, White, & Blue,
stir in wild blueberries if available. :finger:

Kefir provides extra moisture
needed by beet powder. :o

:arrow: Blend peeled jicama with 50/50 mixture
of apple juice concentrate and water,
then stir in cinnamon to taste.

Tips: 1) Use less mixture to blend,
then stir in more as desired.
2) Blend with equal portion of apples
for Appley Jicama Gritty.

:scratch: A very curious curry sauce.
"How to serve?" Try a spoon! ;)

:roll Ingredients:

2 cups low-fat cottage cheese*
1/3 cup yellow mustard
1/2 cup water
1 tsp garlic granules
1 tsp ground cumin
1 tsp ginger
2 tsp turmeric
1 tsp brown sugar
3 tbsp dried chives
1 tbsp virgin olive oil
2 tsp ground coriander seeds
1 tbsp fennel seeds, soaked

* For EZ preparation and smoother sauce,
substitute plain Greek yogurt for cottage cheese,
2 tsp ground fennel seeds for whole seeds, and
1/3 cup water for 1/2 cup; stir vigorously.

:arrow: Directions:

Soak fennel seeds in hot water 5 min.,
then drain. Mix with remaining ingredients,
then blend to desired texture.

Refrigerate overnight, then stir
before first serving.

Pour this off and replace with healthier virgin olive oil. If necessary,
add more oil so that the mixture pours slowly, then stir in
1 1/4 cups white sesame seeds, 1/4 tsp salt (if desired).
Keep refrigerated between servings.

:hithere If you be a spooner, nibble on mini-spoonsful of PBonly
and thawed frozen blueberries. Caution: Lotsa calories,
so don't be a gay spooner in front of the TV. :love

:shock: For "anti-spooner" ambience, add enough olive oil so that
mixture pours easily, then stir in 1/4 cup 100% cacao powder.
A taste not peanut butter, sesame seeds, or chocolate ...
and not sweet! :lol: ... but very nutritious! :roll

:idea: From my experiential perspective of blood sugar control, veggie carbs are not as problematic as grain carbs, according to my glucometer. I suspect that dried, then rehydrated and cooked corn, digests faster than fresh corn. ;)

The appeal of this mixture is that chocolate presents without the typical association of fat
(and only natural fruit sugar); sunflower seeds are less crunchy when soaked in the mixture.

:arrow: Combine 2 cups natural applesauce,
1/3 cup unsweetened shredded coconut,
and 1/4 cup 100% cacao powder.

Refrigerate before serving. 8)

:idea: For a fiberific almondia, serve with raw almonds,
soaked overnight, then drained and refrigerated.

:idea: Include 1/2 cup sunflower seeds to upscale as survival nutrition.
Ingredients don't need refrigeration until packages are opened/mixed. ;)

:bana: For a picnic,
whisk 3/4 cup 100% cacao powder
and 46oz container of natural applesauce,
then stir in 1 cup sunfliower seeds
and 2/3 cup shredded coconut.
Refrigerate overnight.
