where the liver creates glucose from non-carb sources, especially fat and protein.
Thus, fewer carbs consumed before bedtime still results in higher morning blood sugar.
Does MCT oil (converts to ketones for brain fuel) help limit this phenomenon

Of course, too much saturated fat daily is not so good. But using MCT (1/2 tbsp at bedtime?)
