"Sales of the processed cheese product, which food snobs love to hate, have been in decline for years. Then the pandemic hit,
and suddenly stressed-out, homebound people wanted Velveeta for their queso, fudge and extra-cheesy mac and cheese."
"People know what to expect ... There's comfort feeling that goes with that."

Makes sense! Comfort food needs no specific nutrition to be satisfying.

"skim milk, milk, canola oil, milk protein concentrate, sodium phosphate, contains less than 2% of modified food starch,
whey protein concentrate, maltodextrin, whey, salt, calcium phosphate, lactic acid, sorbic acid as a preservative, milkfat,
sodium alginate, sodium citrate, enzymes, apocarotenal and annatto (color), cheese culture, vitamin a palmitate."

Conservative ingredients, considering modern preservatives and additives!
Upscale with tasty spices, etc., to mollify food snobs - those who came
for free drinks will nibble on whatever anyway.

True story: In South Florida elementary school, those plain Velveeta
on white bread sandwiches that had warmed in a hot locker were memorable!
... like monthly Milk of Magnesia in chocolate milk. The good ol' days!

True story: The same elementary school cafeteria
had a memorable sign: "A good citizen eats all of their food."
