A lighter version of pumpkin pie filling,
creating fluffy pudding with similar flavors.


15oz can pumpkin puree
1/4 cup brown sugar, packed
1 1/2 tsp pumpkin pie spice
2 xlg eggs, beaten
1/4 cup egg whites
2/3 cup skim milk
1/2 tsp salt

Lightly oil a 1 1/2 quart baking dish;
pre-heat oven to 350F degrees.
In a medium bowl, whisk pumpkin puree
with remaining ingredients, then pour
into baking dish.
Reduce oven to 325F and bake 1 hr. 10 min.
Allow to cool slightly before serving.
Tip: 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg,
1/8 tsp cloves is a traditional Pumpkin Pie Spice.
